Provided by Allrecipes Member

Yield 6

Number Of Ingredients 11

1 cup wheat berries or whole grain spelt
3 ½ cups water
2 cups chicken or vegetable broth
3 cups small broccoli florets
2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1 tablespoon fresh herb
2 cups red and yellow cherry tomatoes
1 cup corn kernels
¼ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Place the wheat berries or spelt in a sieve and rinse until the water runs clear. Place in a bowl with 2 cups of the water. Let stand for 8 hours or overnight. Drain.
  • Place the remaining 1 1/2 cups water and broth in a medium saucepan and bring to a boil over high heat. Add the wheat berries or spelt and return to a boil. Reduce the heat to low, cover, and simmer for 45 minutes, or until tender, adding the broccoli during the last 5 minutes. Drain and place in a large bowl.
  • Meanwhile, heat the oil in a skillet over medium-high heat. Add the garlic and herb and cook, stirring, for 1 minute. Add the tomatoes, corn, salt, and pepper and cook, stirring frequently, for 3 minutes, or until the tomatoes begin to collapse. Serve over the wheat berries or spelt.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final dish. Look for ripe tomatoes, crisp cucumber, and tender wheat berries.
  • Don't overcook the wheat berries: Wheat berries should be cooked until they are tender but still have a slight bite to them. Overcooked wheat berries will be mushy and unpleasant.
  • Let the salad cool completely before serving: This will allow the flavors to meld and the salad to firm up.
  • Serve the salad with a variety of toppings: This will allow your guests to customize their salads to their liking. Some popular toppings include grilled chicken, roasted vegetables, feta cheese, and balsamic vinegar.

Conclusion:

Italian Wheat Berry Salad is a delicious and healthy dish that is perfect for a summer meal. It is packed with fresh vegetables, hearty wheat berries, and a flavorful dressing. This salad is also a great way to get your daily dose of fiber and whole grains. So next time you are looking for a healthy and satisfying meal, give Italian Wheat Berry Salad a try.
