Handed down by generations, this easy meatloaf recipe is simply unbeatable

Provided by Jamie Oliver

Categories     Mains     Beef     Dinner Party     Father's day     Bonfire night recipes     American     Pork

Time 1h50m

Yield 8

Number Of Ingredients 18

1 medium carrot, peeled
400 g beef mince
400 g higher-welfare pork mince
1 clove of garlic, peeled and crushed
1 teaspoon Old Bay seasoning, or 2 fresh bay leaves, crushed
2 teaspoon Worcestershire sauce
100 g stale breadcrumbs
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
2 large free-range eggs
150 g Cheddar cheese, optional
For the sauce
100 ml BBQ sauce
50 ml tomato ketchup
Tabasco sauce
chili sauce
1 large onion
1 green pepper, deseeded

Steps:

  • Set up your barbecue for the heat canyon technique (place the coals on opposite sides of the barbecue to make two heat walls - this will create sections of hot, direct heat on the sides, with an indirect, cooler area in the middle to ensure your meat gets consistent heat throughout the cook). Place a drip tray inside the middle of the barbecue. Cover with the lid and allow to heat up like an outdoor oven - you want a temperature of around 160°C/320°F.
  • To make your sauce, combine the BBQ sauce and ketchup with a few drops each of Tabasco and chilli sauce, then set aside. Finely dice the onion, pepper and carrot, then put into a large bowl with all the mince, the garlic, bay, Worcestershire sauce, breadcrumbs, salt and pepper. Beat the eggs and add to the mixture, then use your hands to scrunch and mix it all together. Grate in half the cheese (if using), and scrunch to combine.
  • Remove the mixture to a clean work surface and shape into a rectangular loaf (roughly 25cm in length). Using the handle of a wooden spoon, make four diagonal indents (roughly 1cm deep) into the top of the loaf at 3cm intervals, then pour over half the sauce. Place the meatloaf on a big piece of tin foil or in an old roasting tray, then place on the middle of the barbecue. Cover with the lid and cook for 1 hour to 1 hour 15 minutes, or until cooked through. Grate and sprinkle over the remaining cheese (if using), and continue cooking for a minute or so with the lid on, until melted. Remove to a board to rest for around 10 minutes, then slice it up and serve drizzled with the remaining sauce. Cheers, Grandma!

Time 2h

Yield 12

Number Of Ingredients 16

4 medium bulbs of fennel
olive oil
2 onions
2 carrots
½ a bunch of fresh sage (15g)
½ a bunch of fresh rosemary (15g)
1 x 125 g ball of mozzarella cheese
200 g sourdough breadcrumbs
1 kg higher-welfare minced pork
1 kg minced beef
2 teaspoons wholegrain mustard
2 large free-range eggs
12 rashers of higher-welfare smoked streaky bacon
500 ml organic chicken stock
2 tablespoons quality blackcurrant jam
1 tablespoon sun-dried tomato purée

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Trim each fennel bulb and chop into eight wedges, then place in a large roasting tray, drizzle with oil, season with sea salt and black pepper and roast for 30 minutes.
  • Meanwhile, peel and dice the onions and carrots, place in a large pan with 1 tablespoon of oil on a medium-low heat and cook for 20 minutes, stirring occasionally.
  • Pick the herb leaves, finely chop half of them and add to the veg pan, saving the rest for later.
  • Leave the veg to cool completely, then tear in the mozzarella and add the breadcrumbs, minced meat, mustard, eggs, and a good pinch of sea salt and black pepper. Scrunch and mix well, then shape into a loaf.
  • Make a space in the middle of the fennel tray and sit the meatloaf in the centre. Criss-cross the smoky bacon over the meatloaf, drizzle with a little oil, then cover the tray with tin foil.
  • Roast for 30 minutes, then remove from the oven and discard the foil.
  • Mix the chicken stock, jam and tomato purée together in a jug until smooth, then pour into the tray. Toss the reserved herbs with a little oil and scatter into the tray, then return to the oven for a final 45 minutes, or until cooked through.
  • If the juices need thickening at this stage, simply put the tray on the hob to reduce for a few minutes, until they're the consistency of your liking, skimming away any fat from the surface, if needed.
  • Serve the meatloaf, sweet fennel and juices with mash and seasonal greens.

JAMES BEARD'S OLD-FASHIONED MEAT LOAF

James Beard's Old-Fashioned Meat Loaf image

A meatloaf is capable of infinite variations with spices and ingredients. The combination of meats in this version makes this dish more delicious and firm. Bake it free form on a baking sheet or shallow pan, not in a loaf pan, or it will be mushy. It goes great with mashed potatoes or rice. This satisfying dish is adapted from The New James Beard (1981).

NAMOI JUDD'S MOWING FOR MEATLOAF

Namoi Judd's Mowing for Meatloaf image

I got this recipe from the Naomi Judd website and my family LOVES it!!! Here is her intro to the dish... "There's one in every family. One of the essentials for any well-fed family is a good meatloaf recipe. When my Mom cooked on a riverboat, once the crew had tasted her version, it became a standard. Steve Hemplepp, a friend of my brother Mark, would cut Mom's yard in exchange for a piece of this meatloaf. Neighbor ladies paid her in chickens for birthing their babies, and... But seriously now, next time you drive by Mom's house, check out who's behind that push-mower. It could be the singer Meatloaf himself. (Slices of this meatloaf cold make wonderful sandwiches.)-Naomi Judd" This recipe is one of Naomi's many "favorite recipes" from her cookbook titled, "Naomi's Home Companion."

Tips:

  • Select the right ground meat: A combination of ground beef and ground pork is a classic choice for meatloaf, but you can also use ground turkey, lamb, or chicken. If you're using leaner ground meat, add some extra fat, such as butter or olive oil, to keep the meatloaf moist.
  • Season the meatloaf well: Use a variety of herbs and spices to flavor the meatloaf. Common choices include garlic, onion, thyme, oregano, basil, and paprika. You can also add grated cheese, chopped vegetables, or nuts for extra flavor and texture.
  • Don't overmix the meatloaf: Overmixing the meatloaf will make it tough. Mix the ingredients just until they are combined.
  • Bake the meatloaf in a loaf pan: A loaf pan will help the meatloaf keep its shape while baking. You can also use a muffin tin to make individual meatloaves.
  • Cook the meatloaf until it reaches an internal temperature of 160 degrees Fahrenheit: Use a meat thermometer to check the internal temperature of the meatloaf. This will ensure that the meatloaf is cooked through and safe to eat.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and can be enjoyed by people of all ages. With a few simple tips, you can make a delicious and moist meatloaf that your family and friends will love. So next time you're looking for a hearty and satisfying meal, give meatloaf a try. You won't be disappointed.
