CHICKEN WILD RICE SOUP FROM THE PASTOR'S WIFE

Chicken Wild Rice Soup from the Pastor's Wife image

My old pastor's wife used to make this. She was an incredible cook! I will use any recipe of hers--no questions asked! If I don't have dry sherry, I will use orange juice. Sometimes I will add more wild rice and just throw in a little more water as the rice cooks.

Time 1h10m

Yield 1 1/2 cup, 6 serving(s)

Number Of Ingredients 15

3 (10 ounce) cans condensed chicken broth
2 cups water
1/2 cup wild rice
1/2 cup chopped green onion
1/2 cup butter
3/4 cup flour
1/2 teaspoon salt
1/4 teaspoon poultry seasoning
1/8 teaspoon pepper
2 cups half-and-half
1 1/2 cups cooked chicken
8 slices cooked bacon
2 tablespoons dry sherry
1 tablespoon chopped pimiento (optional)
water, if needed

Steps:

  • Combine broth and water. Add wild rice and onion. Simmer, covered, 35-40 minutes until rice is tender.
  • In a separate saucepan, melt butter on low heat and stir in flour, salt, chicken seasoning and pepper.
  • Stir constantly, to prevent burning, until smooth and bubbly.
  • Add half anf half and cook until thickens-about 2 minutes.
  • Slowly add half and half mixture to the rice, stirring constantly.
  • Add remaining ingredients, stirring until thoroughly heated.
  • Add water at the end if you find this to be too thick.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready. This will help you stay organized and avoid scrambling around looking for things while you're cooking.
  • Use a good quality chicken broth: The flavor of your soup will be greatly affected by the quality of the broth you use. Look for a broth that is made with real chicken and has a rich flavor.
  • Don't overcook the chicken: Overcooked chicken is tough and dry. Cook it just until it is cooked through, about 10-12 minutes.
  • Use a variety of vegetables: This will add flavor, color, and nutrients to your soup. Some good options include carrots, celery, onions, mushrooms, and potatoes.
  • Don't be afraid to experiment: Feel free to add other ingredients to your soup, such as herbs, spices, or different types of vegetables. You can also adjust the amount of cream or milk to suit your taste.

Conclusion:

Chicken wild rice soup is a classic comfort food that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste. With a few simple tips, you can make a delicious and satisfying soup that the whole family will enjoy.
