½ cup water
3 egg yolks
1 large egg
¾ cup white sugar

  • Cook curd over medium heat, whisking constantly, until a low boil is reach and curd coats the back of a spoon, about 5 minutes. Remove saucepan from heat. Add butter to curd and whisk continuously until incorporated.

2 eggs
2 egg yolks
2/3 cup granulated sugar
1/4 cup undiluted frozen cranberry juice concentrate, thawed
1/4 cup lemon juice
1 tablespoon soft butter
18 frozen mini tart shells (baked as per package instructions)
1/2 cup whipped cream (sweetened with 2 tsp. granulated sugar)
1 tablespoon lemon rind, finely grated

Steps:

  • Whisk together eggs, egg yolks, and sugar in large microwaveable bowl. Stir in cranberry cocktail, lemon juice and butter. Microwave on HIGH for 2 minutes; stir. Return to microwave; cook until mxiture begins to boil and thickens, about 2 minutes longer. Stir until smooth. Pour through a fine strainer into bowl. Cover and chill in refrigertor.
