THREADGILL'S COTTAGE CHEESE CUCUMBER SALAD

Threadgill's Cottage Cheese Cucumber Salad image

This refreshing salad from Threadgill's brings back fond memories of iced tea, live music, fried catfish, and other delights from the Austin, TX restaurant. The dish can be served as a side salad, or, for a low-calorie lunch, serve on a bed of lettuce with some tomato wedges sprinkled with salt & pepper. I clipped the recipe from the Austin American Statesman many years ago. The original called for fresh parsley, but I like it with the dill.

Time 5m

Yield 4 serving(s)

Number Of Ingredients 6

16 ounces low fat cottage cheese
1 cucumber
2 tablespoons chopped fresh dill
1/4 cup chopped green onion
pepper
Tabasco sauce

Steps:

  • Peel the cucumber and slice lengthwise into halves. Scrape out the seeds and discard, then chop the cucumber.
  • In a medium bowl, mix together the cottage cheese, cucumber, dill, and green onion. Fresh dill is best, but if you must substitute, use only 1 tsp of dried.
  • Sprinkle on some black pepper and 3 dashes of Tabasco, stir again, and taste. Add more pepper and Tabasco to your taste. If you wish, skip the Tabasco and let everybody add it to their own serving.
  • Serve immediately.

Tips:

  • Choose the right cucumbers: For the best results, use fresh, firm cucumbers that are not too seedy. English cucumbers or Persian cucumbers are good choices.
  • Peel the cucumbers: Peeling the cucumbers will help to remove any bitterness and make the salad more refreshing.
  • Cut the cucumbers into thin slices: This will help them to absorb the flavors of the other ingredients more easily.
  • Use good quality cottage cheese: Cottage cheese is the star of this salad, so it's important to use a good quality brand. Look for cottage cheese that is smooth and creamy, with no lumps.
  • Add some flavor to the cottage cheese: You can add some flavor to the cottage cheese by mixing in some herbs, spices, or vegetables. Some good options include chives, dill, parsley, garlic powder, onion powder, or chopped bell pepper.
  • Don't overmix the salad: Overmixing the salad will make it watery. Gently toss the ingredients together until they are just combined.
  • Serve the salad chilled: This salad is best served chilled. You can either refrigerate it for at least 30 minutes before serving, or you can serve it immediately and let it chill in the refrigerator for a few hours before eating.

Conclusion:

Jello with cucumbers and cottage cheese is a refreshing and unique salad that is perfect for summer. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a light and healthy salad, give this one a try!
