Time 30m

Yield 4 - 6 servings

Number Of Ingredients 11

1 pound Jerusalem artichokes or sun chokes, 8 to 10
Salt to taste, if desired
1 tablespoon imported mustard such as Dijon
2 tablespoons red wine vinegar
1/2 cup olive oil
Freshly ground pepper to taste
1 1/2 pounds shrimp, cooked, shelled and deveined
1/2 cup finely chopped red onion
1 teaspoon finely minced garlic
1/4 teaspoon hot red pepper flakes
1/4 cup finely chopped parsley

Steps:

  • Using a small regular or swivel-bladed paring knife, peel the artichokes. If the artichokes are very large, cut them in half. Ideally, the artichokes or pieces of artichokes should be of uniform size or the size of the smallest whole artichoke.
  • Put the artichokes in a saucepan. Add cold water to cover and salt to taste. Bring to a boil and let simmer about 10 to 15 minutes or until tender but still a little crisp. Drain well.
  • While the artichokes are still warm cut them in quarter-inch thick slices. Put them in a bowl.
  • Put the mustard and vinegar in a small bowl. Start beating with a wire whisk while gradually adding the oil. Beat in salt and pepper to taste.
  • Add the shrimp, onion, garlic, pepper flakes and parsley to the artichokes. Pour the sauce over all and stir to blend. Serve.

BAKED JERUSALEM ARTICHOKES WITH BREAD CRUMBS, THYME AND LEMON

Baked Jerusalem Artichokes with Bread Crumbs, Thyme and Lemon image

Provided by Jamie Oliver

Categories     side-dish

Time 1h

Number Of Ingredients 9

1/2 pint creme fraiche or double cream
1 lemon, juiced
2 cloves garlic, peeled and finely chopped
1 good handful fresh thyme, picked and chopped
1 to 2 handfuls grated Parmesan cheese
3 handfuls Jerusalem artichokes, peeled and sliced as thick as a pencil
2 good handfuls stale bread crumbs
Salt and freshly ground black pepper
Olive oil

Steps:

  • Preheat your oven to 230C/450F.Gas 8. In a bowl mix together your creme fraiche, lemon juice, garlic, half the thyme and most of the Parmesan, and season well to taste. Thin out with around 6 to 8 tablespoons of water and throw in the sliced Jerusalem artichokes. Mix well and place everything in an ovenproof baking dish. Cover with tin foil and bake for 35 minutes.
  • Mix the bread crumbs, the remaining thyme and some salt and pepper with a touch of olive oil. Remove the artichokes from the oven, discard the foil and sprinkle the remaining Parmesan over the top. Then sprinkle the flavored bread crumbs over the Parmesan. Use up all the bread crumbs. Bake in the oven for about15 minutes until the bread crumbs are golden. If you're in a pokey pokey kind of mood you can poke the artichokes about a bit so some of the bread crumbs fall underneath them. This makes it look more rustic instead of like a crumble.

ROASTED JERUSALEM ARTICHOKES (OR SUNCHOKES)

Roasted Jerusalem Artichokes (or Sunchokes) image

This is a super-easy way to cook these vegetables if you've never tried them before and by far my favorite. Jerusalem artichokes, or sunchokes, are starchy tubers like potatoes and turnips. When roasted, the skin becomes flaky and the flesh becomes tender, but the taste of a sunchoke is slightly nutty and sweet. Cooked sunchokes are best when eaten within 2 days. When raw, they store well in your fridge's vegetable bin, wrapped loosely in a paper towel. Enjoy!

TURNIP AND JERUSALEM ARTICHOKE SOUP

Turnip and Jerusalem Artichoke Soup image

A cheap and filling soup which makes good use of winter root vegetables. For a luxury version, you could add bacon, croutons, cream or all three. The original recipe, which I modified, called for 2 parsnips instead of turnip.

Provided by Sackville

Categories     European

Time 50m

Yield 4 serving(s)

Number Of Ingredients 8

2 medium onions, chopped (leeks are also okay)
1 tablespoon olive oil
1 small turnip, peeled and chopped
1 lb jerusalem artichoke, peeled and sliced
4 ounces split red lentils
2 pints vegetable stock
1 bay leaf
salt and pepper

Steps:

  • When you are preparing the artichokes, drop them into water with a bit of lemon juice or vinegar as you go so they don't discolour. Drain before adding to the recipe later.
  • Start the soup by sauteing the onions in the oil for a couple minutes.
  • Add the turnips and artichokes. Fry for 3 - 4 minutes, then put the lid on and sweat for 5 minutes, stirring once or twice to avoid sticking.
  • You may need to add 1/4 cup water if things start to stick to the pot.
  • Rinse the lentils in a sieve then add to the vegetables with the stock. Stir well and bring to the boil.
  • Boil for 10 minutes, then reduce heat to a gentle simmer. Simmer for about 25 minutes.
  • Remove the bay leaf.
  • Liquidise if preferred, then season to taste.

JERUSALEM ARTICHOKES

Jerusalem Artichokes image

The Palestine Gardens is a miniature replica of sites from the Holy Land built down in the piney woods around Lucedale, Mississippi. For sixteen years Reverend Walter Harvell Jackson and his wife searched for a place to build his Bible-themed garden. After seven years of construction, the forty-acre garden opened in 1960 with Bethlehem, Jericho, and Jerusalem all constructed out of concrete blocks, and with its own Dead Sea. It has expanded over the years to include the Sea of Galilee. Jerusalem artichokes do well in the kind of sandy soil and full sun they have down there in George County and will thrive in most gardens, producing the edible tubers and brilliant yellow sunflowers. I like to serve this over Israeli couscous, of course.

Yield serves 4

Number Of Ingredients 7

1 lemon, halved
1 1/2 pounds Jerusalem artichokes
2 tablespoons olive oil
2 garlic cloves
Sprig of fresh thyme
1 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Squeeze the lemon into a bowl of water. Thinly slice the lemon and set the slices aside.
  • With a sharp knife, scrape the outside skin of the artichokes just to remove the dark nubs. Slice the artichokes into 1/4-inch slices and put them in the bowl of lemon water.
  • In a large skillet set over medium-low heat, heat the oil. Drain the artichoke slices and put them in the skillet. Add the lemon slices, garlic, and thyme. Season with the salt and pepper. Cook, stirring, for 10 minutes or until the artichokes are tender when pierced with a knife.

Tips:

  • To properly clean Jerusalem artichokes, use a vegetable brush to scrub off any dirt or blemishes. Then, rinse them thoroughly under cold water.
  • When slicing Jerusalem artichokes, wear gloves to protect your hands from the sap, which can cause skin irritation.
  • To prevent Jerusalem artichokes from discoloring, toss them in a mixture of lemon juice and water before cooking.
  • Jerusalem artichokes can be roasted, sautéed, boiled, or fried. They can also be added to soups, stews, and salads.
  • To make a simple vinaigrette dressing, whisk together olive oil, vinegar, Dijon mustard, salt, and pepper.
  • For a more flavorful vinaigrette, add herbs such as parsley, chives, or tarragon.
  • Serve Jerusalem artichokes and shrimp vinaigrette immediately, or chill for later use.

Conclusion:

Jerusalem artichokes and shrimp vinaigrette is a delicious and healthy dish that can be enjoyed as an appetizer or main course. The Jerusalem artichokes are roasted until tender and flavorful, and the shrimp are cooked in a flavorful vinaigrette. This dish is sure to please everyone at your table.
