WATERMELON MARGARITAS
Summer's best flavors get frosty in the cocktail we serve at all our backyard shindigs. We mix sun-ripened watermelon and our favorite tequila with just the right amount of ice for a thick and boozy sipper that's perfect when we're grilling and chilling.-Alicia Cummings, Marshalltown, Iowa

WATERMELON MARGARITA
Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

Steps:
- Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
- In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine. (Note: The watermelon flavor shines brighter without the Cointreau, but the liqueur takes the drink into more traditional margarita territory. If you'd like to compare, first try the mixture without, the liqueur, then add 1 ounce of it per serving.)
- Using one of the squeezed lime halves, run it along the rim of two rocks glasses, then dip the rims into the salt mixture. Fill the glasses with ice, then strain the margaritas into the glasses and enjoy immediately.

Steps:
- In a medium saucepan, combine the lime zest, water, and sugar. Bring to a boil over medium heat, and cook, stirring, until the sugar dissolves. Remove from the heat. Cool to room temperature. (Can be made in advance; keep in a covered container in the refrigerator.)
- Chill a margarita glass in the freezer for 30 minutes. Place the coarse salt in a shallow dish or saucer. Wet the rim of the glass with a lime wedge and dip the glass into the salt, coating the top edge.
- In a cocktail shaker, combine 2 tablespoons of the cooled lime syrup with the watermelon puree, lime juice, tequila, orange-flavored liqueur, and ice. Shake until frothy and well chilled, at least 1 minute. Strain into the prepared glass and garnish with a lime wedge.
Tips:
- Choose a ripe watermelon. A ripe watermelon will be heavy for its size and have a deep red color. Avoid watermelons with bruises or soft spots.
- Chill the watermelon before using. This will help to make the margaritas extra refreshing.
- Use fresh lime juice. Fresh lime juice will give the margaritas a bright, citrusy flavor. Avoid using bottled lime juice, which can be bitter.
- Use good quality tequila. A good quality tequila will make a big difference in the flavor of the margaritas. Look for a tequila that is 100% agave.
- Don't over-blend the margaritas. Over-blending can make the margaritas too icy and slushy. Blend the margaritas just until they are smooth.
- Garnish the margaritas with a lime wedge and a watermelon slice. This will add a pop of color and flavor to the margaritas.
Conclusion:
Watermelon margaritas are a delicious and refreshing cocktail that is perfect for summer parties. They are easy to make and can be customized to your liking. Whether you like your margaritas sweet, sour, or somewhere in between, you are sure to find a watermelon margarita recipe that you love.
