CHEF JOHN'S BANANA BREAD

Chef John's Banana Bread image

Banana bread is one of those things people rarely make on purpose, only when those last three bananas are almost black. This scrumptious banana-walnut loaf, spiked with dark chocolate chips, is so good you'll want to make it well before the bananas get to that condition.

JOHN'S BANANA BREAD

John's Banana Bread image

My brother makes a killer banana bread, where the batter is basically a way to cement together all kinds of nutty, fruity goodness. There is no oil at all in this recipe. The result is almost fruitcakeish, except that it's actually edible! :-) Like fruitcake, the loaves are pretty stable and improve with age. You can add pretty much any kind/combination of dried fruit and nuts - as long as it adds up to the same total weight of the ingredients listed below.

JAMES BEARD BANANA BREAD

James Beard Banana Bread image

From James Beard Bread Book. One of the must have books. It's simply the best. I make muffins instead of bread, it's faster to make. The bread's not gummy and easier for my mum-in-law to eat. I grate up a little orange peel sometimes to be different.

Time 1h15m

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your banana bread will be.
  • Don't overmix the batter. Overmixing can make your banana bread tough. Mix just until the ingredients are combined.
  • Use a loaf pan that is at least 9x5 inches. A smaller pan will make your banana bread too thick and dense.
  • Bake the banana bread at 350 degrees Fahrenheit for 50-60 minutes. Check the bread with a toothpick after 50 minutes. If the toothpick comes out clean, the bread is done.
  • Let the banana bread cool completely before slicing and serving. This will help the bread to set and prevent it from crumbling.

Conclusion:

Banana bread is a classic quick bread that is easy to make and always a crowd-pleaser. With its moist, flavorful crumb and sweet banana flavor, it's the perfect snack or breakfast treat. There are many different ways to make banana bread, but the basic ingredients and steps are always the same. By following the tips above, you can make a delicious banana bread that everyone will love.
