A Jordanian friend of mine introduced me to these flavorful and satisfying wraps several years ago. My husband and I love these! They make a great meal, at home, or on the road. The proportions of spices are approximate... it's a rich yellow with red speckled look and aromatic smell that you should go for. You can eat them hot, or better, at just above room temperature. This is not a quick recipe. It's best if you can work on it throughout the day. I'd love to know the real name for this or better instructions if anyone knows them.

Yield 6-8 wraps

Number Of Ingredients 10

6 chicken breasts
1 (8 ounce) package slivered almonds
4 large onions
1 cup olive oil
1/4 cup curry powder
1/8 cup coriander powder
1/8 cup ground sumac
1 tablespoon ground pepper
1 teaspoon salt
lavash bread or 6 -8 tortillas

Steps:

  • Cook chicken in water flavored with a bay leaf, carrots, and additional coriander, ground pepper, and sumac until done.
  • Strain and save the broth.
  • Reduce broth to make about 5 cups and add additional chicken bullion, if desired.
  • While the chicken cooks, toast the slivered almonds until light brown and fragrant.
  • You may need to shake the pan or use a spatula to flip the nuts and keep them from burning.
  • Allow chicken to cool enough to handle.
  • Chop or pull apart chicken into small pieces.
  • Saute sliced onions in olive oil until they begin to turn translucent.
  • Add chicken pieces and more oil to coat, if necessary.
  • Add large quantities of coriander, sumac, curry powder, ground pepper, and salt.
  • Add about a cup or two of the broth and mix.
  • Keep adding spices, oil, and/or broth as needed to let the chicken become very soft and moist with a rich yellow color and flecked thoroughly with sumac (the red/brown spots).
  • This may take awhile.
  • Add toasted almonds and stir.
  • Cut Lavash bread in half, or use tortillas.
  • Place one cup of filling on bread.
  • Fold like a burrito, wrapping fully.
  • Stack in a pile on a plate.
  • Leave to cool until comfortable to touch.
  • Eat with your hands.

½ cucumber , halved, deseeded and sliced
1 small carrot , grated
1 tbsp white wine vinegar
2 tbsp vegetable oil
8 boneless, skinless chicken thighs , cut into thin strips
2 garlic cloves , finely chopped
25g ginger (peeled weight), finely grated
3 tbsp light brown soft sugar
2 tbsp soy sauce
8 mini or 4 large soft flour tortillas
2 Little Gem lettuces , leaves separated and cut in half

Steps:

  • Put the cucumber, carrot and vinegar in a small bowl and set aside. Heat 1 tbsp oil in a large frying pan, add the chicken and fry on a medium heat until golden brown and cooked through. Remove and set aside. Pour the remaining oil into the pan and lower the heat. Add the garlic and ginger, and cook for 2 mins until softened but not coloured. Add the sugar, soy sauce and 150ml water, and bubble for 5 mins until saucy. Return the chicken to the pan and heat through.
  • Warm the tortilla wraps following pack instructions. Top the tortillas with the lettuce, chicken, and pickled cucumber and carrot.

4 skinless chicken breasts
200g Greek yogurt
juice and zest 1 lemon
1 tsp allspice
2 tsp olive oil
2 garlic cloves , crushed
25g pine nuts , toasted
small bunch parsley , finely chopped
2 tomatoes , diced
½ cucumber , diced
4 large tortilla wraps or large flatbreads
mixed salad , to serve

Steps:

  • Lay the chicken breasts on a sheet of baking parchment, cover with another sheet of parchment, then flatten by bashing them with a rolling pin. Mix half the yogurt in a large bowl with half the lemon juice, the lemon zest, allspice, olive oil, garlic and a pinch of salt. Mix thoroughly, then stir in the chicken, making sure it is well coated in the mixture. Cover and chill for 30 mins to marinate.
  • Heat a griddle pan over a high heat and cook the chicken for 5-6 mins each side or until cooked through (you may need to do this in batches). Transfer to a board and slice. Spread the rest of the yogurt over the wraps and fill with the pine nuts, cooked chicken, parsley, tomatoes and cucumber. Drizzle over the rest of the lemon juice and roll up. Put the wraps back on the griddle pan for 30 secs each side to lightly toast, then serve with a mixed salad.

  • Preheat oven to 400 degrees. Place cooked chicken on a rimmed baking sheet; roast until skin is very dark and crispy, 20 to 25 minutes. Transfer to a cutting board. 1 rotisserie chicken, skinned and boned, meat pulled into large chunks
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1 (12 ounce) package coleslaw mix with carrots
1 tablespoon chopped fresh basil
2 tablespoons white sugar
black pepper to taste
½ cup hoisin sauce
¼ cup soy sauce
2 tablespoons white vinegar
1 head green leaf lettuce, leaves separated, rinsed, and patted dry
1 cup Thai-style peanut sauce

Steps:

  • Heat a large skillet over medium-high heat. Add chicken, garlic, ginger, coleslaw mix, basil, sugar, and pepper. Pour in hoisin sauce, soy sauce, and vinegar. Bring to a simmer, and cook and stir until the chicken is hot, and the liquid has been absorbed, about 10 minutes.

I've been playing around with this recipe from Taste of Home Back Yard Grilling and think I've got it right for our taste. This is so good, it can be a meal in itself. It's a little heat intense, but we like it that way. We loved the combination of spices. Hope you try it.

1 lb boneless skinless chicken breast
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon pepper
2 teaspoons seasoning salt
1 teaspoon paprika
1 small purple onion, cut into strips
15 jalapeno peppers, halved and seeded
1 lb of shaved smoked ham (I used Petite Jean Smoked Ham. You can also use thin sliced bacon or prosciutto)
bleu cheese salad dressing

Steps:

  • Cut chicken into 2 in strips that will fit the size of your pepper. (The size of the chicken strips will depend on how large your peppers are, so use your judgment. Even if they are bigger than the pepper, just tuck in what ever overlaps and it works fine).
  • In a large resealable plastic bag, combine the garlic powder,onion powder, pepper, seasoned salt and paprika.
  • Add Chicken and shake to coat.
  • Place a chicken and onion strip in each jalapeno half. (If you don't like your onion a little crispy, saute in 1 tbl of butter for 2-3 minutes to soften).
  • Wrap each pepper with a slice or two of the shaved smoked ham, enough to cover the entire pepper and place on baking sheet. You will need toothpicks if you use bacon or the prosciutto.
  • Preheat oven to 350 degrees.
  • Bake peppers for 20-25 minutes or until the ham is slightly browned and chicken juice runs clear.
  • You can also grill these:.

  • Grill peppers uncovered, over indiredct medium heat for 20-25 minutes or until chicken juices run clear and ham is slightly brown.
