Lightly breaded jumbo diver sea-scallops, baked in a terrific lemon garlic butter sauce!!! One of my favorites. Delicious served with a crisp green salad and pasta or French bread, -or- may be served as an appetizer.

1 1/2 lbs jumbo deep sea scallops (diver's scallops)
1/2 cup fresh butter
1 garlic clove, minced
1 tablespoon white wine (optional)
3/4 cup fine plain breadcrumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons fresh parsley, finely chopped
1/2 teaspoon fresh lemon thyme, finely chopped
1 fresh lemon, quartered

Steps:

  • Preheat oven to 400 degrees F.
  • Place the butter and garlic (and the white wine, if using) into an oven proof baking dish (I use a pyrex pie plate).
  • Microwave on high heat for 30 seconds to 1 minute, just until butter is melted (or, you may place the dish of butter into the hot oven for a few minutes, until butter melts).
  • Rinse scallops well under cold water. Arrange rinsed scallops (no need to dry them) in the dish of melted butter.
  • In a small bowl, whisk together the breadcrumbs, salt, pepper, parsley and lemon thyme. Sprinkle breadcrumb mixture evenly over scallops.
  • Squeeze the juice of one lemon quarter evenly over the scallops.
  • Bake at 400 degrees F for 18 to 20 minutes.
  • To Serve:.
  • Serve with additional fresh lemon wedges at the table.

2 teaspoons unsalted butter
2 teaspoons olive oil

Steps:

  • Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry.
  • Add the butter and oil to a 12 to 14-inch saute pan on high heat. Salt and pepper the scallops. 5 tablespoons butter, melted
5 cloves garlic, minced
2 shallots, chopped
3 pinches ground nutmeg
salt and pepper to taste
1 cup bread crumbs
4 tablespoons olive oil
¼ cup chopped parsley
1 lemon wedges for garnish

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place scallops, melted butter, garlic, and shallots in a bowl. Season with nutmeg, salt, and pepper. Stir gently to combine. Transfer to a casserole dish.

1 ½ pounds bay scallops, rinsed and drained
½ cup seasoned dry bread crumbs
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon paprika

3 cloves garlic, minced
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).

Roast Diver Scallops with Baked Fingerling Potatoes and White Truffles image

1 pound fingerling potatoes, "Ruby Crescent"
1/2 cup Kosher salt, for baking potatoes
1 small bunch fresh chervil, or flat leaf parsley if unavailable, 1/2 chopped, 1/2 reserved for garnish
2 ounces white truffle oil
4 tablespoons whole unsalted butter, room temperature
Salt and pepper, to taste
1 pound sea scallops, (U-12), should be "Dry", "Dayboat", or "Divers"
1 white truffle, approximately 1-ounce
1/4 canola oil, for sauteing scallops
1 truffle slicer

Steps:

  • Scrub potatoes well and drain. Lay Kosher salt in an even layer of a baking pan to accommodate all the potatoes in one batch without crowding. Bake in a preheated 375 degrees for 20 to 30 minutes until just tender. Remove and let cool. This step should be done 1 hour or as many as 4 hours before serving. While potatoes are baking, check through scallops and remove any remaining tough membranes. When potatoes are cool enough to handle, cut, with a sharp paring knife, the top 1/4 off and hollow out the potato to form a "boat". Reserve potato interiors and tops. Combine scooped out portion with the chopped portion of chervil. 1/2 of truffle oil and butter, season with salt and pepper to taste and refill potato "boats" and reheat in preheated 325 degree oven for 6 minutes. Next, heat 2, 10-inch, skillets until quite hot, as potatoes are reheating. Season scallops and pat dry with paper towels. Distribute canola oil evenly in both pans and put 1/2 scallops in 1 pan. 1/2 in the other taking care to put the "cut" side down and not to overcrowd them. Sear well until browned (approximately 2 to 3 minutes each side.) Remove scallops from pan and drain on paper towels briefly before arranging attractively on 4 warm plates with the now hot twice baking potatoes. Drizzle remaining truffle oil over scallops and potatoes and shave truffle over all garnishing with chervil sprigs.

3 ounces pork, chorizo
2 ounces black beans (canned, reserve some of the liquid)
1 teaspoon minced garlic
1 teaspoon minced onion
2 teaspoons sweet potatoes (cooked, cut into small cubes)
2 tablespoons chopped tomatoes
2 teaspoons bell peppers (cut into small cubes)
2 teaspoons pureed mangoes
1 teaspoon chili paste
2 teaspoons butter
1 tablespoon lemon juice
6 diver scallops
6 medium shrimp (deveined & shelled)
1/8 teaspoon salt
1/8 teaspoon ground pepper
2 ounces white wine

Steps:

  • In a saute' pan cook chorizo until it begins to get firm.
  • Add remaining vegetables and black beans. Use some of the bean liquid to thin out the mixture. You want to have a pourable consistency. This should take about 5 minutes.
  • Add mango puree and asian chili paste.
  • In a separate pan, melt butter, then add scallops. Do not shake pan. The scallops must develop a crust before turning over. About 2-3 minutes.
  • Add shrimp. When it's time to turn the scallops over, it'll be time for the shrimp to be turned as well. You want the shrimp to be orange with slight charring.
  • Carefully add the wine. It should sizzle, then bubble and mix with the flavors of the scallops and shrimp.
  • Press on scallops to check doneness. It should be slightly resistant.
  • Take a tablespoon and scoop out about 3 ounces of the chili mixture onto each plate.
  • Top with micro mint greens.
  • Add 3 Scallops in a triangle pattern.
  • Intermix with 3 shrimp. Drizzle juices from seafood pan over the diah.

Tips:

  • To ensure the scallops are cooked evenly, make sure they are all roughly the same size.
  • If you don't have jumbo scallops, you can use regular scallops and adjust the cooking time accordingly.
