1/4 cup orange juice
2 tablespoons cider vinegar
2 tablespoons plain yogurt
1 tablespoon grated orange zest
2 teaspoons sugar
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 to 3/4 cup olive oil
8 cups torn fresh spinach
8 cups torn Bibb or Boston lettuce
4 medium peaches, peeled and sliced
4 bacon strips, cooked and crumbled

Steps:

  • In a blender, combine the first eight ingredients. While processing, gradually add oil in a steady stream. Process until blended., In a large salad bowl, combine the spinach, lettuce, peaches and bacon. Drizzle with dressing; toss to coat. Serve immediately.

2 hearts romaine lettuce
2 small plum tomatoes, diced
1 Kirby cucumber or 1/4 European seedless cucumber, diced
1 small yellow onion or 1/2 red onion, chopped
1 carrot, peeled and shredded
1/4 cup (a couple of glugs) extra-virgin olive oil
2 to 3 tablespoons (a couple of splashes) red wine vinegar
1 teaspoon sugar
Coarse salt and black pepper

Steps:

  • Place salad greens in a salad bowl and top with tomatoes, cucumbers, onion, and carrot. Place oil, vinegar and sugar in a small plastic container. Put the lid on the container and shake dressing until sugar dissolves, about 1 minute. Pour dressing over salad. Season salad with salt and pepper, to taste, and toss to combine.

Since "Peach Season" is here, I was Inspired to Used up the Fresh fruits of the Season, and the greens from my garden. Note: any Combination of Salad greens, works well Hope You'll enjoy, the taste test. Tip: Nectarines, and Apricots work well in this salad, even a few Strawberries delight the eyes, or the combination of.

JUST A PEACHY DRESSING, PLACE IN BLENDER, BLEND WELL
1/4 C - peach necter
2 Tbs - cider vinegar
2 Tbs - plain yogurt
2 tsp - sugar or splenda
1/2 tsp - garlic pdr
1/2 tsp - salt
- pepper to taste
2 - peaches, fresh peeled, pitted, and chopped
1/2-3/4 C - crisco, olive oil. . . . . while processing, pour oil slowly in a steady stream process til blended and creamy looking.
SALAD
8 C - baby spinach
8 C - torn romain. bibb or head lettuce, or any mix of salad greens or combination of .
top - with sprinkled or crumbled bacon or bacon bits
4 - large peaches, peeled, 2 sliced and 2 chopped (more if you prefer)
- optional: blueberries sprinkled over the top

Steps:

  • MIx dressing above, Blending the first 9 ingredients for the Dressing, as Directed above. Chill at least 1 hr.
  • Mix Washed and chilled salad greens adding peaches, chopped and slices, Toss well Drizzle Dressing Over Greens. Sprinkle with Bacon, and Top with Blueberries, Optional. . . . ENJOY!!!! Refreshing to your taste Buds.

I am always told We don't get enough fish in our Diets, So I decided to Add some Tuna to salad and this was a hit of the Family with Soup, for a filling Meal. Budget friendly and simple to prepare. You can use any combination of vegies in your salad you choose for variations.

1 - head of iceburg lettuce, torn into bite size pieces
2 lg - fresh red tomatoes, cut in eights, or diced
1/2 - red onion, sliced into thin slices (can use white or yellow)
1 - can of tuna, packed in water or oil ( drain)
2-3 - hard boiled eggs, grated or chopped
1 med - avacodo sliced or diced in chunks
- good seasons italian dressing to taste
- (optional:)sliced black olives, cukes, cherry tomatoes cut in 1/2, green onions chopped, use your imagination, combinations are endless.

3 cups fresh spinach, torn

3 tablespoons prepared horseradish
1/2 teaspoon Worcestershire sauce
