MIDDLE EASTERN CHICKEN KEBABS IN HONEY-SOY MARINADE

Middle Eastern Chicken Kebabs in Honey-Soy Marinade image

The delicious honey-soy marinade with the garlic makes them special. You could try adding cherry tomatoes or mushrooms. Or use shrimps instead and add pineapple. If you don't grill them too hot you can put the veggies and meat on the same skewers without burning the veggies.

Time 30m

Yield 8 serving(s)

Number Of Ingredients 10

8 tablespoons oil
10 tablespoons honey
10 tablespoons soy sauce
2 teaspoons cumin
2 teaspoons cayenne pepper
pepper
4 -6 chicken breasts, cubed
2 garlic cloves, minced
4 onions, cut up
2 red bell peppers, cut up

Steps:

  • In a bowl mix oil, honey, soy sauce, cumin, cayenne and pepper. Set a small amount of the marinade aside for basting later on. Then add the meat, veggies and garlic and let them marinate in the fridge for at least 2 hours. The longer the better.

  • Grill on the BBQ for 12-15 minutes or until done. Keepturning and basting with the marinade you set aside earlier.

KOFTA KEBABS

These kebabs have 6 different kinds of spices; the first time I smelled them I knew immediately that I had to find the recipe. The most affordable way to purchase the spices is in bulk at either a health food store or an Asian or Middle-Eastern market. They are very good! Serve with yogurt, flat bread, lettuce, tomato and cucumber.

Time 1h20m

Yield 28

Number Of Ingredients 13

4 cloves garlic, minced
1 teaspoon kosher salt
1 pound ground lamb
3 tablespoons grated onion
3 tablespoons chopped fresh parsley
1 tablespoon ground coriander
1 teaspoon ground cumin
½ tablespoon ground cinnamon
½ teaspoon ground allspice
¼ teaspoon cayenne pepper
¼ teaspoon ground ginger
¼ teaspoon ground black pepper
28 bamboo skewers, soaked in water for 30 minutes

Steps:

  • Mash the garlic into a paste with the salt using a mortar and pestle or the flat side of a chef's knife on your cutting board. Mix the garlic into the lamb along with the onion, parsley, coriander, cumin, cinnamon, allspice, cayenne pepper, ginger, and pepper in a mixing bowl until well blended. Form the mixture into 28 balls. Form each ball around the tip of a skewer, flattening into a 2 inch oval; repeat with the remaining skewers. Place the kebabs onto a baking sheet, cover, and refrigerate at least 30 minutes, or up to 12 hours.
  • Preheat an outdoor grill for medium heat, and lightly oil grate.
  • Cook the skewers on the preheated grill, turning occasionally, until the lamb has cooked to your desired degree of doneness, about 6 minutes for medium.

Tips:

  • Choose the right meat: For kababs, it's best to use meat that is tender and flavorful, such as lamb, beef, or chicken. If you're using ground meat, make sure it's finely ground so that it will hold together well on the skewers.
  • Marinate the meat: Marinating the meat before cooking helps to tenderize it and add flavor. There are many different marinade recipes to choose from, so experiment until you find one that you like. Be sure to marinate the meat for at least 30 minutes, or up to overnight.
  • Use fresh vegetables: Fresh vegetables add color, flavor, and nutrients to kababs. Choose vegetables that are in season and that will hold up well on the skewers. Some good options include bell peppers, onions, tomatoes, mushrooms, and zucchini.
  • Skewer the meat and vegetables: When skewering the meat and vegetables, make sure to alternate them so that each skewer has a variety of flavors and textures. You can also add pieces of fruit, such as pineapple or mango, to the skewers.
  • Cook the kababs over high heat: Kababs should be cooked over high heat so that they caramelize on the outside and stay juicy on the inside. You can cook them on a grill, in a grill pan, or in the oven.
  • Serve the kababs with your favorite dipping sauce: Kababs can be served with a variety of dipping sauces, such as tzatziki sauce, hummus, or tahini sauce. You can also serve them with rice, pita bread, or salad.

Conclusion:

Kababs are a delicious and versatile dish that can be enjoyed by people of all ages. They are perfect for parties, picnics, or everyday meals. With a little planning and preparation, you can easily make delicious kababs at home. So next time you're looking for a tasty and easy meal, give kababs a try!
