KAHLUA DREAM BARS

This uses a 1/2 c Kahlua liquer in the topping! It sounds so delicious. It comes from "The Joy of Cookies" by Sharon Tyler Herbst. The author suggests using pecans in place of the coconut if you are not a fan of coconut. Prep time is a guess. Some ingredients are listed more than once and in different quantities because the first time is for the cookies base, and the second is for the topping.

  • Preheat oven to 350ºF.
  • Lightly grease a 13 x 9-inch baking pan.
  • Melt butter and chocolate in a small saucepan over low heat.
  • Set aside to cool.
  • Mix flour, baking powder and salt.
  • In a large bowl, beat brown sugar, eggs, powdered coffee and vanilla extract until blended.
  • Stir in cooled chocolate mixture.
  • Spread batter in an even layer in prepared pan.
  • Cheesecake Layer:.
  • Beat cream cheese, sugar and flour in a large bowl with an electric mixer on medium speed until pale and fluffy.
  • Add eggs, one at a time, beating well after each.
  • Beat in liqueur, vanilla extract and cinnamon.
  • Carefully pour over brownie layer and spread in an even layer.
  • Bake 20 minutes until the top is almost set.
  • Sour Cream Layer:.
  • Mix sour cream and sugar.
  • After bars have baked 20 minutes, remove pan from oven and carefully spread sour cream mixture over top.
  • Return to oven and bake 10 minutes longer.
  • Cool pan completely on wire rack before cutting in bars.

Tips:

  • Make sure all ingredients are at room temperature before starting. This will ensure that the ingredients mix evenly and smoothly.
  • Use a food processor to grind the graham crackers into fine crumbs. This will help the crust to hold together better.
  • Press the graham cracker crumbs into the bottom of a 9x13 inch baking pan. Make sure the crumbs are evenly distributed and firmly packed.
  • In a large bowl, cream together the butter and sugar until light and fluffy. This will take about 2 minutes on medium speed with a hand mixer.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Spread the batter over the prepared crust. Bake at 350 degrees Fahrenheit for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bars to cool completely before frosting. This will help the frosting to set properly.
  • For the frosting, simply whisk together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy. Spread the frosting over the cooled bars and refrigerate for at least 30 minutes before serving.
