KALE CHIPS
Crispy, crunchy, and nutritious! I used Spanish sherry vinegar, but any vinegar you like the flavor of will work. I checked every 10 minutes or so and turned some pieces over. I also found I didn't mind if there were a few softer parts on some of the kale leaves, I liked the combination of crisp and softer parts.

Steps:
- Preheat an oven to 300 degrees F (150 degrees C).
- Cut away inner ribs from each kale leaf and discard; tear the leaves into pieces of uniform size. (I made my pieces about the size of a small potato chip.) Wash torn kale pieces and spin dry in a salad spinner or dry with paper towels until they're very dry.
- Put the kale pieces into a large resealable bag (or use a bowl if you don't mind getting your hands oily). Add about half the olive oil; seal and squeeze the bag so the oil gets distributed evenly on the kale pieces. Add the remaining oil and squeeze the bag more, until all kale pieces are evenly coated with oil and slightly 'massaged.' Sprinkle the vinegar over the kale leaves, reseal the bag, and shake to spread the vinegar evenly over the leaves. Spread the leaves evenly onto a baking sheet.
- Roast in the preheated oven until mostly crisp, about 35 minutes. Season with salt and serve immediately.

Tips for Making Perfect Kale Chips in the Microwave:
- Choose fresh, tender kale leaves: Avoid wilted or bruised leaves, as they won't crisp up as well.
- Wash and dry the kale thoroughly: This will help remove any dirt or debris and prevent the chips from becoming soggy.
- Remove the stems: The stems are tough and fibrous, so remove them before cooking to ensure crispy chips.
- Tear the kale into bite-sized pieces: This will help them cook evenly and prevent them from clumping together.
- Massage the kale with oil: This will help coat the leaves and promote even cooking. Use a neutral oil like olive oil or avocado oil.
- Season the kale to taste: You can use a variety of seasonings, such as salt, pepper, garlic powder, onion powder, or chili powder.
- Spread the kale in a single layer on a microwave-safe plate: Overcrowding the plate will prevent the chips from cooking evenly.
- Microwave the kale in short bursts: Start with 30 seconds and then check the chips. Continue microwaving in 15-second intervals until the chips are crispy, about 1-2 minutes total.
- Let the chips cool before enjoying: The chips will continue to crisp up as they cool.
Conclusion:
Kale chips are a healthy and delicious snack that can be easily made in the microwave. By following these tips, you can make perfect kale chips every time. Enjoy them as a snack on their own, or use them to top salads, soups, or sandwiches. With their crispy texture and savory flavor, kale chips are a great way to add a healthy crunch to your diet.
