KAREN'S TORTELLINI SOUP
I originally found this on AllRecipes.com and modified it to meet with my family's preferences. My daughter, who is one of the fussiest people I know, even likes this (although she does manage to avoid getting any chunks of vegetables in her bowl). We like it hot, but you can cool the heat by using sweet sausage and not adding the dried chilis. If you can find them use the mini tortellini.

This is a great use for those fresh pasta packages in the cooler of the store. It's a good time to start making soups too. Just make the soup base ahead of time and drop in the pasta when ready.

TORTELLINI SOUP
It's a wonderful comfort food. Friends and family always rave about this soup and want the recipe. Tastes even better after warming up the leftovers. This is a family favorite I got from my Mother-in-law. I use the dry packaged tortellini. If you're a garlic lover, don't be afraid to add more. If you're a spinach lover add more to the leftovers when warming over. When serving the soup sprinkle desired amount of parmesean cheese on top of individual portion and stir in.

This recipe has been modified several times by members to make it vegetarian (vegan even), and still it's a popular recipe. I've decided to post the vegetarian version so it will be official. This is not vegan, but can be converted easily by subbing the tortellini for plain pasta.

Tips:
- Use a flavorful broth: A good quality broth will make all the difference in the flavor of your soup. You can use chicken, beef, or vegetable broth, depending on your preference.
- Brown the tortellini: Browning the tortellini gives them a slightly crispy exterior and helps to develop their flavor. Be sure to brown them in a single layer so that they get evenly cooked.
- Add plenty of vegetables: Vegetables add flavor, color, and nutrients to your soup. Use a variety of vegetables, such as carrots, celery, onions, and spinach.
- Use fresh herbs: Fresh herbs add a bright, flavorful touch to your soup. Use herbs such as parsley, basil, or oregano.
- Don't overcook the soup: Overcooked soup can become bland and mushy. Be sure to simmer the soup for just until the vegetables are tender and the tortellini is cooked through.
