KELLY'S KIHEI, MAUI TERIYAKI SAUCE

Kelly's Kihei, Maui Teriyaki Sauce image

This is a recipe that we used growing up on Maui. We mostly used it to marinade chicken or beef short rips and then grill the. Because of the sugar content, like barbecue sauce, be careful because it burns easily. I always cook on the grill using indirect heat.

TERIYAKI MAHI MAHI

Teriyaki Mahi Mahi image

After trying a few mahi mahi recipes, this one is definitely my favorite. This glazed mahi mahi is good with rice, vegetables or salad. Blotting the fillets before cooking allows a nice brown crust to form. Cod or halibut can be used, too. -Michelle Ibarrientos, Torrance, California

Tips:

  • Choose high-quality soy sauce: Opt for a premium soy sauce with a rich, umami flavor. Look for brands that use traditional brewing methods and avoid those with added chemicals or preservatives.
  • Balance the flavors: Teriyaki sauce should have a harmonious balance of sweet, salty, and savory flavors. Adjust the proportions of soy sauce, mirin, and sugar to suit your taste.
  • Use fresh ingredients: Fresh ginger and garlic add a vibrant flavor to the sauce. Use them generously and avoid using pre-packaged or powdered alternatives.
  • Simmer the sauce: Simmering the sauce over low heat allows the flavors to meld and deepen. Be patient and let the sauce simmer for at least 15 minutes, or up to 30 minutes for a more concentrated flavor.
  • Taste and adjust: Always taste the sauce before serving and make adjustments as needed. Add a bit more soy sauce for saltiness, mirin for sweetness, or sugar for a touch of umami.
