Oven Baked KFC Style (Kentucky Fried) Chicken - make this yummy healthier Kentucky fried chicken for the ultimate fakeaway feast in your own home for the whole family to dig in and enjoy.

Number Of Ingredients 16

8 Chicken Pieces, drumsticks or bone in thighs are best (all skin and visible fat removed)
1 cup (240ml) of buttermilk (3 syns) (*see note)
spray oil
8 slices of low calorie wholemeal (whole wheat) bread - 4x HEb's
2 eggs, beaten
1 teaspoon of salt
1 teaspoon of oregano
2 teaspoons of garlic salt
1 teaspoon of onion powder
1 teaspoon of thyme
1 teaspoon of ground ginger
1 teaspoon of basil
1 teaspoon of celery seed
1 teaspoon of black pepper
1 teaspoon of mustard powder
3 teaspoons of paprika

Steps:

  • Put chicken in zip lock bag or dish (that you can cover), add the buttermilk, shake to thoroughly coat and place in the refrigerator overnight.
  • Then when you are reading to make your KFC style feast, the following day you can go to the next step.
  • Very lightly toast the pieces of bread (I find this gives a much crispier coating) and allow to cool
  • Preheat oven to 200c, fan 180c or 400f (gas mark 6)
  • Place lightly toasted bread in a food processor and blitz until fine breadcrumbs.
  • Line a large baking tray with some parchment paper and spray with spray oil
  • Add the breadcrumbs to a bowl, along with all the herbs and spices and mix thoroughly
  • Remove the chicken pieces from the bag (or dish) and discard of the bag and leftover buttermilk.
  • Add the breadcrumb mix to a dish or plate.
  • One by one dip each chicken piece in the beaten egg and then roll into the breadcrumbs (pat the breadcrumbs firmly into the chicken with hands to ensure each chicken piece is thoroughly covered with the breadcrumb mix.
  • Place the chicken pieces onto the parchment lined tray and spray over the top with spray oil.
  • Bake in the oven for approx 45 mins, until the chicken is lovely and golden and cooked through.

150 ml buttermilk
1 lemon, grated rind
2 garlic cloves, crushed
1/2 teaspoon celery salt
1 teaspoon ground black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon coarse grain mustard
1 teaspoon dried herbes de provence
8 small chicken drumsticks
50 g plain flour

Steps:

  • Mix the buttermilk with the lemon rind, garlic, celery salt, pepper, paprika, mustard and herbs. Mix well, pour over chicken. Marinate for 3 hours or overnight.
  • Preheat the oven to Gas 7/220C.
  • Place the flour on a plate, remove the chicken from the marinade and roll the pieces in the flour. Place the drumsticks on a lightly oiled baking tray and spray with a little oil. Roast for 15 minutes in the oven then spray again with a little more oil.
  • Cook for a further 15-20 minutes until the chicken is golden and no longer pink in the centre. Serve with oven chips and ketchup.

1 cup flour
1 tablespoon salt
1 tablespoon pepper
2 tablespoons paprika
1/2 teaspoon garlic salt
1/2 tablespoon dry mustard
1/2 tablespoon ground French thyme
1/2 tablespoon ground dried sweet basil leaves
1/2 teaspoon ground oregano
1/2 tablespoon ground ginger
1/2 tablespoon nutmeg (optional if you want the original KFC flavor) (optional)
1 cup yellow mustard (for the rub, any cheap yellow mustard)

  • Use 2 to 3 pounds of cut up chicken - skin on. Legs and thighs work best and breasts are OK.
  • The above mix makes a lot! Start with a tablespoon or 2 and increase to coat the chicken. Toss in a gallon bag to cover.
  • Make sure that the chicken is moist but NOT WET. Frozen chicken tends to be wet. Dry it with paper towels before shaking it.
  • So what is the extra secret? Hand rub the chicken pieces with cheap yellow mustard before shaking them in the above mix. The mustard does not add a mustard taste.
  • 20 minutes per pound at 375 degrees or just at high for a Nu-Wave.
