KENTUCKY "RACE DAY" CHOCOLATE PECAN PIE

Kentucky

This is an incredibly easy but wonderful pie recipe to celebrate the Kentucky Derby! It is very rich, but it is great with vanilla ice cream or whipped cream. To speed up the process, you could use a pre-packaged pie crust, but I highly recommend making a quick and easy crust from scratch!

Time 3h55m

Yield 8

Number Of Ingredients 12

1 ¼ cups all-purpose flour
1 pinch salt
½ cup cold unsalted butter
¼ cup ice water
1 cup white sugar
½ cup unsalted butter, at room temperature
2 large eggs
½ cup all-purpose flour
1 teaspoon bourbon
1 pinch salt
1 cup milk chocolate chips
1 cup chopped pecans

Steps:

  • Combine flour and salt in a large bowl. Cut in butter until mixture resembles coarse crumbs. Stir in water, 1 tablespoon at a time, until dough forms a ball. Wrap in plastic wrap and refrigerate for 3 hours.
  • Roll dough out to fit a 9-inch pie plate. Place crust in the pie plate. Press evenly over the bottom and up the sides.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat sugar and butter together in a bowl with an electric mixer until creamy. Add eggs, flour, bourbon, and salt and mix at very low speed for 1 minute. Be careful not to overmix or the texture could suffer. Add chocolate chips and pecans and mix at very low speed for about 30 seconds. Scrape the pie filling into the pie shell using a rubber spatula.
  • Bake on the middle rack of the preheated oven until set, 35 to 40 minutes.

FANNIE LOU'S DERBY PIE

Fannie Lou's Derby Pie image

The Kentucky Derby is a two-minute horse race, but its cultural impacts are long-lasting, including a rich culinary tradition of mint juleps, hot browns and Derby pie. Only Kern's Kitchen Inc. can make a true "Derby-Pie" - the creators of the dessert trademarked the term before partnering with the Kentucky Derby Festival - but while the naming practices are sticky, the concept is universal: a chocolate-chip and walnut-laden batter baked in a pie crust. This version is adapted from author ZZ Packer, who shared her great-aunt's recipe. Many versions exist - some spike the batter with bourbon; others swap in varying nuts or crown the pie with whipped cream - but Fannie Lou's is easy to assemble, and makes a lasting impression.

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 8

1 unbaked 9-inch pie crust (see recipe)
4 tablespoons butter, melted
2 large eggs
1 teaspoon vanilla extract
1 cup dark brown sugar
1/2 cup flour
3/4 cup chopped walnuts
3/4 cup semisweet-chocolate chips

Steps:

  • Heat the oven to 350 degrees. Transfer the crust to a pie plate and prick the bottom with a fork. Cover lightly with a sheet of foil, pressing it gently into the crust and making sure the edges are covered. Place weights (metal pie weights or dried beans) on the foil to weigh down the bottom and hold up the sides of the crust. Bake for 10 minutes, then remove foil. Continue baking until the crust is firm and has lost its sheen but is not browned, about 5 more minutes. Set aside.
  • In a medium bowl, whisk the butter, eggs and vanilla extract. Add the brown sugar and flour and stir until thoroughly blended. Using a rubber spatula, fold in the walnuts and chocolate chips.
  • Pour the batter into the crust. Bake until puffed and golden brown, about 30 minutes. Remove from the heat and place on a rack to cool. Serve warm.

Tips:

  • Use fresh, high-quality ingredients: The better the ingredients, the better the pie will be. This is especially true for the chocolate, which should be semisweet or bittersweet.
  • Don't overmix the dough: Overmixing will make the dough tough. Mix it just until it comes together.
  • Chill the dough before rolling it out: This will make it easier to work with and less likely to stick to the rolling pin.
  • Don't overbake the pie: The center of the pie should be slightly jiggly when you take it out of the oven. It will continue to cook as it cools.
  • Serve the pie warm or at room temperature: This will allow the flavors to develop and meld together. You can also top the pie with whipped cream or ice cream.

Conclusion:

Kentucky Horse Race Pie is a delicious and festive dessert that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. With its rich chocolate flavor and creamy filling, this pie is sure to be a hit at your next party or gathering.
