2 ounces (1/4 cup) fresh key lime juice (from 8 to 10 Key limes; or regular lime juice from 2 to 3 limes)
2 ounces (1/4 cup) light rum
2 tablespoons simple syrup
1 cup ice
Half a key lime, for garnish

  • Combine lime juice, light rum, simple syrup, and ice in a cocktail shaker; shake well. Add more simple syrup to taste if desired. Strain into a chilled cocktail glass and garnish with half a key lime.

1/4 t salt
1/2 t lime zest

  • Bake pie crust at 450 til golden, set aside and let cool. Combine 2/3 C sugar, gelatin, and salt. Stir in limejuice, water and yolks. Cook and stir over low heat til thickens slightly. Remove from heat, stir in zest, tint with food coloring. Cool slighly, stir in rum. Chill to consistency of corn syrup, stirring occasionally. Remove from refrigerator. Immediately beat egg whites til soft peaks form. Gradually add 1/3 C sugar, beating to stiff peaks. When gelatin is the consistency of unbeaten egg whites, fold in stiffly beaten egg whites. Cihll til mixture mounds when spooned. Turn into baked pastry shell. Chill several hours or til set. cover, chill to serve.

1/2 teaspoon lemon juice

  • Preheat oven to 325°.
  • Grease and flour a 10-inch tube pan.
  • Mix together the flour and baking powder.
  • In a large bowl, cream together 1 cup butter, shortening, and 2 cups sugar until light and fluffy.
