2 tablespoons Louisiana-style hot sauce

GRILLED FISH TACOS WITH KEY LIME SAUCE

Grilled Fish Tacos with Key Lime Sauce image

These fish tacos with a crunchy slaw and creamy, tangy sauce really hit the spot. Key limes are smaller, tarter and more aromatic than Persian limes and worth seeking out, but you can definitely use regular limes instead.

Categories     main-dish

Time 25m

Yield 8 servings

Number Of Ingredients 16

5 cups shredded red cabbage
4 Key limes or 1 lime, juiced
3 scallions, thinly sliced
1 medium jalapeno, halved lengthwise and thinly sliced
2 1/2 tablespoons finely chopped cilantro leaves
Kosher salt and freshly ground black pepper, to taste
6 Key limes or 2 limes, juiced
1 cup mayonnaise
2 tablespoons Dijon mustard
Grapeseed oil, for the grill or grill pan and for drizzling
1 1/2 pounds skinless white fish fillets, such as rockfish, snapper, grouper or cod
Ground cumin, for sprinkling
Kosher salt and freshly ground black pepper
8 small flour tortillas
2 medium tomatoes, cut into 1/4-inch dice
Cilantro leaves, for sprinkling

Steps:

  • For the slaw: Combine the cabbage, lime juice, scallions, jalapeno and cilantro in a large bowl. Season to taste with salt and pepper. Let sit for 10 minutes, toss again and season again to taste with salt and pepper. Set aside for up to 2 hours at room temperature, or refrigerate for up to 2 days. (The longer it sits the better it gets.)
  • Preheat the grill over medium-high heat to 375 degrees F or heat a grill pan over medium heat. Clean and oil the grill grates.
  • Meanwhile, for the key lime sauce: Whisk the lime juice, mayonnaise and mustard together in a small bowl. Set aside.
  • For the fish and assembly: Place the fish on a rimmed baking sheet. Drizzle both sides with oil then liberally sprinkle with cumin, salt and pepper until both sides are coated. Grill the fish until you see grill marks and the flesh is white and easily flakes with a fork, 2 to 3 minutes per side depending on the thickness. (It's okay if the fish breaks since it will be broken up into large chunks for the tacos.) Transfer to a plate.
  • Grill the tortillas until lightly charred, about 1 minute per side.
  • Fill each tortilla with about 1/4 cup of the slaw, followed by some of the fish broken into large chunks. Drizzle with sauce, top with a scattering of the tomatoes and a sprinkling of cilantro leaves and serve immediately.

KEY LIME BUTTER SAUCE

Key Lime Butter Sauce image

This is not a beurre blanc as there is no cream in a beurre blanc. It is a delicious butter sauce though! I serve it with seared scallops, spinach, jasmine rice, also a red pepper sauce.

1/4 pound(s) butter (1 stick)
2 tablespoon(s) white wine
2 tablespoon(s) sherry
2 tablespoon(s) lemon juice
- salt and freshly ground black pepper to taste
- pinch dried oregano
- pinch dried thyme
1/2 pound(s) linguine
2 - garlic cloves, crushed
2 tablespoon(s) key lime juice
3 tablespoon(s) bottled buffalo wing sauce
1/2 cup(s) diced tomatoes
1 - lobster tail, shell removed and cut into 1 inch pieces
12 - shrimp, peeled and deveined
3 ounce(s) jumbo lump crabmeat
1/4 cup(s) sliced scallions

Steps:

  • Allow the butter to soften, cut into large pieces, and place in the bowl of an electric mixer or food processor. With the mixer running, slowly add the wine, sherry and lemon juice. Mix to a thick cream and add the oregano, thyme and salt and pepper to taste.
  • Bring a large saucepan filled with water to boil over high heat. When boiling, add the linguine, and cook for 3 minutes if fresh or 8 minutes if dried. Drain.
  • Mix the garlic, key lime juice and wing sauce together in a skillet. Add the tomatoes and butter sauce. Place over medium-high heat. Add the lobster tail and shrimp. Saute for 3 to 4 minutes or until shrimp are pink and the lobster cooked through.Do not overcook the shellfish. It will become rubbery. Add the crabmeat and cook for 1 minute to warm the crabmeat. Serve over pasta and sprinkle the scallions on top.

Tips:

  • Choose fresh seafood: Opt for seafood that is firm, plump, and has a mild, briny aroma. Avoid seafood that appears slimy or has an off odor.
  • Cook the seafood properly: Seafood cooks quickly, so be careful not to overcook it. Overcooked seafood becomes tough and rubbery.
  • Use a flavorful marinade: Marinating the seafood in a mixture of olive oil, herbs, and spices will help to enhance its flavor.
  • Don't overcrowd the pan: When cooking the seafood, make sure not to overcrowd the pan. This will prevent the seafood from cooking evenly.
  • Use a variety of vegetables: This recipe calls for bell peppers, zucchini, and corn, but you can use any vegetables that you like.
  • Cook the pasta aldente: Al-dente pasta is slightly firm to the bite. This will help to prevent the pasta from becoming mushy when it is combined with the sauce.
  • Garnish with fresh herbs: Garnish the dish with fresh herbs, such as cilantro or basil, to add a pop of color and flavor.
