1-1/2 pounds ground beef
2 cans (16 ounces each) kidney beans, rinsed and drained
2 cans (8 ounces each) tomato sauce
1 envelope taco seasoning
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup crumbled tortilla chips
1/2 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Add the beans, tomato sauce and taco seasoning; bring to a boil. Transfer to a greased shallow 2-1/2-qt. baking dish. , Bake, uncovered, at 350° for 30-35 minutes. Top with olives, tortilla chips and cheese. Bake 5 minutes longer or until cheese is melted.

1 (15 ounce) can kidney beans (drained and rinsed)
1 cup of cooked corn
1/2 an onion, diced
1/2 a garlic clove, minced
1 roma tomato, diced
1 teaspoon italian seasoning
1 tablespoon taco seasoning
1 tablespoon olive oil
taco shell
shredded cheese (whatever your favorite is)
salsa
sour cream

Steps:

  • Saute onion and garlic in olive oil until tender.
  • Meanwhile, mash the cooked corn and kidney beans together.
  • Combine bean mixture to onion and garlic.
  • Add italian and taco seasoning.
  • Mix together (turn skillet off).
  • Layer cheese, bean mixture and tomatoes in tacos.
  • Top with salsa and sour cream.

3/4 cup kidney beans, rinsed and drained
1/4 cup chopped onion
1/4 cup chopped green chilies, drained
1/4 teaspoon ground cumin
16 Triscuits or other crackers
3/4 cup shredded cheddar cheese
1/2 cup 2% milk
1/3 cup mayonnaise
2 tablespoons beaten egg
Optional: sour cream and sliced ripe olives

Steps:

  • Preheat oven to 350°. In a small bowl, combine the beans, onion, green chilies and cumin. Place eight crackers in an 8x4-in. loaf pan coated with cooking spray. Top with half of the bean mixture; layer with remaining crackers and bean mixture. Sprinkle with cheese., In a small bowl, combine the milk, mayonnaise and egg; pour over cheese. Bake, uncovered, until a thermometer reads 160°, 20-25 minutes. If desired, serve with sour cream and olives.

1 taco seasoning
1 head lettuce, shredded
3 tomatoes, diced
1 (14 ounce) can red kidney beans
1/2 green pepper, chopped
1/2 red pepper, chopped
1 onion, chopped
3/4 cup cheese, grated
1 (8 ounce) bottle Catalina dressing
1 tortilla chips

  • Brown hamburger in skillet.

2 eggs
2 (15 ounce) cans kidney beans, drained
½ onion, diced
1 stalk celery, diced
2 tablespoons sweet pickle relish
½ cup mayonnaise
salt and pepper to taste

  • Place eggs in a saucepan with enough cold water to cover. Bring to a boil. Remove saucepan from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Drain, cool, peel, and chop.

1 (16 ounce) jar salsa
1 (1 ounce) package Old El Paso taco seasoning mix
2 1/2 cups coarsely broken corn tortilla chips (divided)
1 medium green bell pepper (diced)
4 green onions (sliced)
3 tomatoes (diced and divided)
1 cup shredded cheddar cheese (or favorite cheese)
1/4 cup sliced black olives

Steps:

  • Heat oven to 350 degrees.
