a very simple but delicious way to prepare AND ENJOY cauliflower. we ate all that i prepared and they wanted more !!!

Steps:
- boil salted water in a large stockpot. When water is boiling add the washed, cored, head of cauliflower to boiling water. let boil til cauliflower is tender. Turn to low and simmer . Drain and reserve head of cauliflower pieces. return to pan and add stick of margarine or butter, salt and pepper. Add brown sugar and minced garlic . Stir until brown sugar is well incorporated and coated on the cauliflower. Serve and enjoy !

I grew up eating cauliflower this way. In college, I included this in my menu for our school restaurant. Our chef did not want to allow me to serve it. Not only did we serve it, but almost every patron asked for the recipe! Chef even apologized to me after he tasted it! This is a great way to get kids to eat cauliflower (and grown-ups too)!

- Place cut cauliflower in a large saucepan and cover with water. Bring to a boil and cook until just fork tender, about 10 minutes; drain and transfer to a bowl.
- Melt butter in a saucepan over low heat; add cooked cauliflower and vanilla wafer crumbs and stir until evenly coated.
