KIELBASA AND NOODLES OR RICE OR WHATEVER OAMC CROCK POT
Kielbasa was on sale, which was good. I was tired of tomato based sauces, which was bad. I finally mingled the best parts of several recipes and came up with this. It's not bad if I do say so and I do say so. It also doesn't hurt that it is quick and easy.

I like this because it's cooked on the stove. One pan to clean. Change the soup and/or the cheese for different flavors.

Steps:
- Bring a large pot of lightly salted water to a boil for pasta.
- Meanwhile, heat olive oil over medium-high heat in a deep skillet. Add onion and garlic to the hot oil and saute just until tender, about 5 minutes. Add kielbasa to the skillet and cook and stir until browned, 3 to 4 minutes. Stir in tomatoes, mushrooms, sugar, balsamic, salt, black pepper, and red pepper. Reduce heat and let sauce simmer while you cook pasta.
- Add penne to the pot of boiling water and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes, stirring peas into pasta during last 2 minutes of cooking time.
- Drain pasta and transfer to sauce. Stir to combine and add basil. Heat over medium-low heat so pasta can absorb liquid from sauce, about 5 minutes. Stir in Cheddar-Monterey Jack cheese and serve.

Tips:
- For a smoky flavor, cook the kielbasa on the grill before adding it to the slow cooker.
- If you don't have a slow cooker, you can brown the kielbasa in a skillet over medium heat and then simmer it in a covered pot over low heat for 1-2 hours.
- Add your favorite vegetables to the slow cooker along with the kielbasa and noodles. Some good options include potatoes, carrots, celery, and onions.
- If you want a thicker sauce, add a cornstarch slurry (equal parts cornstarch and water) to the slow cooker during the last 30 minutes of cooking.
- Serve the kielbasa and noodles over rice, mashed potatoes, or your favorite pasta.
