POTATO KIELBASA LEEK SOUP
I like the leek soup mix but I wanted to bulk it up with meat and vegetables. I combined a few recipes to come up with this one. I like that it's simple, at least once I learned not to boil the milk. It still tastes OK of the milk boils, just not the perfect texture.

Steps:
- 1. Saute onions in butter in a medium sauce pan about 2-3 minutes or until tender.
- 2. Pour chicken broth into onions and bring to a boil.
- 3. Add all ingredients to broth with the exception of the light cream. (Do not add cream until soup has been cooked according to time allotted!!) Stir ingredients together until well mixed. Cook for 25 minutes on low heat.
- 4. While soup is cooking, about the last 10 minutes, prepare your julienned potatoes. In a small frying pan, saute, well seasoned, potatoes in butter until crisp. (about 5 minutes) Move julienned potatoes to a paper towel to soak up excess grease from the butter.
- 5. When soup has been cooking for 25 minutes, add cream. Heat through and served with garnish.
Tips:
- Choose the right kielbasa: A good quality kielbasa will make all the difference in this soup. Look for a kielbasa that is made with fresh, high-quality pork and has a nice smoky flavor. You can use any type of kielbasa you like, but some popular options include Polish, Lithuanian, and German kielbasa.
- Use a variety of vegetables: This soup is a great way to use up leftover vegetables. Feel free to add any vegetables you like, such as carrots, celery, onions, potatoes, or cabbage. You can also add some frozen vegetables, such as peas or corn.
- Don't overcook the potatoes: The potatoes should be cooked until they are tender, but not mushy. Overcooked potatoes will make the soup too thick.
- Season to taste: This soup is very forgiving when it comes to seasoning. Add salt, pepper, and other spices to taste. You can also add a bit of sour cream or yogurt for a tangy flavor.
- Serve with crusty bread: This soup is perfect for a cold winter day. Serve it with a side of crusty bread or crackers for dipping.
Conclusion:
Kielbasa potato soup is a hearty, flavorful soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste. So next time you are looking for a quick and easy meal, give kielbasa potato soup a try. You won't be disappointed!
