1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 teaspoon salt
1/2 teaspoon Cajun seasoning
1 1/2 cups uncooked instant rice
Red pepper sauce, if desired

Steps:

  • Spray 12-inch skillet with cooking spray; heat over medium-high heat. Add onion, garlic and bell pepper to skillet. Cover; cook 3 to 5 minutes, stirring once, until vegetables are crisp-tender.

12 ounce package Hillshire Farms Polska Kielbasa, sliced
4 Tablespoons Sesame Oil
1 small onion, diced
1 clove garlic, minced
1 cup carrots, diced
1 cup frozen peas
2 eggs
1/4 cup Reduced Sodium Soy Sauce
Tops of 3 green onions, sliced

Steps:

  • In a large skillet heat Sesame oil, add garlic, sliced sausage, onion and carrots. Sauté for about 5 minutes.
  • Add in peas. Stir, continue to cook until sausage is browned and the veggies are the desired tenderness. About 5 minutes.
  • Push the mixture to one side of your skillet and in the other, add a little sesame oil, scramble your eggs. Mix it all together.
  • Add rice and soy sauce and continue cooking for another 5 minutes.
  • Top with green onions and serve hot from the skillet.

Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend.
