1 can (14-1/2 ounces) reduced-sodium chicken broth
3/4 cup water, divided
2 tablespoons sugar
1 teaspoon caraway seeds
1/4 teaspoon pepper
1 can (16 ounces) kidney beans, rinsed and drained
3 tablespoons cider vinegar
2 tablespoons all-purpose flour

Steps:

  • In a large saucepan or nonstick skillet, brown sausage over medium heat. Add the potatoes, cabbage, onion, broth, 1/2 cup water, sugar, caraway seeds and pepper. Bring to a boil. 1 ½ pounds sauerkraut, drained and rinsed
2 Granny Smith apples - peeled, cored and sliced into rings
¾ onion, sliced into rings
2 pounds red potatoes, quartered
1 ½ cups chicken broth
½ teaspoon caraway seeds
½ cup shredded Swiss cheese

Steps:

  • Place half the sausage in a slow cooker, and top with the sauerkraut. Cover with the remaining sausage, apples, and onion. Top with the potatoes. Pour chicken broth over all, and sprinkle with caraway seeds.

1 lb kielbasa
1 large head of cabbage
1 large onion
3 -4 russet potatoes (peeled)
water
garlic (to taste)
salt and pepper (to taste)
vinegar (to add on as wanted per serving)

Steps:

  • Cut the cabbage in about 8 slices and then in chunks. Place this in a pot with enough water to cover. Add onion that has been cut into chunks. Cover and bring to a boil.
  • When the cabbage is almost done, add sliced raw potatoes (about 1/2" thick) and sliced Kielbasa.(sliced thin(about 1/4") if you want meat in every bite, or thick if you want to bite into chunks (about 3/4").
  • Also add your spices. There should be just enough water to barely cover the stew.
  • Cover and cook at a simmer till potatoes are done.(about 15 minutes).
  • I serve this in a soup bowl, and add a bit of vinegar to your liking, just before eating. If you don't care for vinegar, adding a bit of chicken stock and less water while cooking will flavor this dish also.
  • It is a real warm you up meal on a cold winter day. I keep this meal simple. I serve with it with biscuits and butter, or a loaf of garlic bread.

6 large potatoes, peeled and cubed
¼ cup butter
10 cups water
1 teaspoon salt
1 teaspoon ground black pepper
2 ½ pounds kale - rinsed, dried and chopped
⅔ pound kielbasa sausage, sliced into 1/2 inch pieces

  • Place the potatoes into a large stockpot, over medium high heat. Add butter and water, and bring to a boil. Cook potatoes until tender, about 20 minutes. Reserve the cooking liquid and mash potatoes in the pan until smooth. Return the potato water to the pot and stir in salt and pepper. Simmer for 20 minutes.
  • Stir in the fresh kale and sausage and simmer for another 30 minutes. Serve hot.

1 1/2 cups chopped green bell peppers

1 lb low-fat turkey kielbasa (can use ham instead) or 1 lb low-fat turkey kielbasa, cut into 1-inch slices (can use ham instead)
1 medium tart apple, diced

You can reduce the fat content by choosing low-fat or Turkey-kielbasa.

1 (28 ounce) can diced tomatoes (try the kind with green peppers or onions or garlic already added)
6 ounces tomato paste
1 cup dry red wine
3/4 teaspoon dried basil
3/4 teaspoon dried thyme
1 bay leaf
1/2 teaspoon crushed red pepper flakes
1 lb dried lentils, rinsed and drained with any stones removed
1 large onion, chopped
4 carrots, cut into 1/2 inch rounds
4 stalks celery, cut into 1/2 inch slices
3 cloves garlic, minced
3 large red potatoes, cubed
1 (24 ounce) can turnip greens or 1 (24 ounce) can kale
1 lb light pre-cooked kielbasa, sliced (optional)
salt and black pepper

Steps:

  • Combine water, tomatoes with juice, tomato paste, red wine, basil, thyme, bay leaf, crush red peeper in slow cooker.
  • Stir to blend.
  • Add lentils, onion, carrots, celery, potatoes, garlic, greens and kielbasa.
  • Cover.
  • Cook on low 10-12 hours or on high 4-5 hours.
  • Remove bay leaf, and serve with chopped basil, parsley, hot sauce or sour cream garnish (or any combination of these).

2 Tbsp canola oil
1 lb smoked kielbasa, sliced
1 onion, chopped
2 carrots, shredded
4 Tbsp butter
1 small head of cabbage, cut into 1 inch pieces
1 tsp salt
1 tsp black pepper
1/4 tsp garlic powder
8 c chicken broth
4-5 medium potatoes, peeled and cubed
1 10.5 oz. can of cream of celery soup
1 Tbsp fresh parsley

Steps:

  • 1. Saute kielbasa in oil in a large pot or dutch oven until browned.
  • 2. Add onion and carrots and continue cooking until onins are semi translucent.
  • 3. Add butter, cabbage, salt, pepper and garlic powder and continue cooking for about 10 minutes.
  • 4. Add chicken broth and cook until cabbage is tender. Once cabbage is cooked, add potatoes and cook another 15-20 minutes until potatoes are tender. Add cream of celery soup, cover and simmer for 25-30 minutes longer. Add parsley just before serving.
