Bag of Hersey's Caramel Filled Kisses (About 60 Pieces)
2-3 Containers Nutter Butter Cookie Bites
1/4 cup of Mini-Chocolate Chips (For Melting & Tops of Acorns)

Steps:

  • Unwrap kisses and set aside.
  • Line a baking sheet with parchment paper and lay out Nutter Butter Bites.
  • Put a plate in the microwave for 20-30 seconds. Remove the plate and when the plate is warm, not really hot, place 10 Kisses on the plate. Let them sit for a few seconds. Test them by lifting and checking the bottom of the first one you put on the plate. If it's starting to melt then start placing on the Nutter Butter Bites in the same order you put them on the plate. This will make sure the Kisses are evenly melted and ready to 'glue' onto the cookie. Let harden.
  • When ready, melt a small amount of chocolate. (You can just melt a handful of mini-chocolate chips.) Place a toothpick in the melted chocolate and put a dab of melted chocolate in the center of the top of the acorn. Then put a mini-chocolate chip on top of the melted chocolate.
  • Repeat until you have the desired number of acorns. Let sit until firm.

1/2 cup miniature semisweet chocolate chips
48 milk chocolate kisses
48 Nutter Butter Bites

Steps:

  • Reserve 48 chocolate chips. In a microwave, melt remaining chocolate chips; stir until smooth. Spread the flat side of each kiss with a small amount of melted chocolate; immediately attach each to a cookie., Secure one reserved chocolate chip as a stem onto each acorn. Place on waxed or parchment-lined baking sheets; let stand until set. Store in an airtight container.

ROYAL ICING
Hershey's Kisses Brand Milk Chocolates or Hershey's Kisses Brand Pumpkin Spice Flavored Candies
Mini vanilla wafer cookies
Reese's Peanut Butter Chips or Hershey's Butterscotch Chips

Steps:

  • Prepare royal icing and place in pastry bag with small tip. Remove wrappers from candies. Place mini vanilla wafer cookies on tray or plate with flat side of cookie toward the top. Squeeze small amount of icing onto bottom of candy piece. Immediately press candy bottom onto vanilla wafer cookie. Allow icing to set. Place small dab of icing on bottom of peanut butter chip or butterscotch chip; immediately attach to top of cookie to finish acorn. ROYAL ICING Stir together 1 cup plus 2 tablespoons powdered sugar, 1 tablespoon warm water and 1-1/2 teaspoons pasteurized dried egg whites, meringue powder. Beat at medium speed of electric mixer until spreadable. Add additional water, 1 teaspoon at a time, to get desired consistency. Transfer icing to pastry bag with desired tip. Cover icing and tip of pastry bag with damp paper towel to keep icing from drying out. About 1/2 cup icing.

24 dark chocolate kisses
24 Hershey chocolate kisses (milk chocolate)
1/2 cup peanut butter chips
24 semi-sweet chocolate chips
24 peanut butter chips
48 Nuttter Butter Bites

Steps:

  • Unwrap the Kisses and set aside. Arrange all the ingredients on a piece of parchment paper or directly on the counter top.
  • Melt 1/4 cup peanut butter chips in the microwave for about 20-30 seconds. Stir the chips and microwave for 10-30 more seconds -- don't over cook. When assembling the acorns, I set the bowl of melted peanut butter chips in a larger bowl of very hot/boiling water so the chips stay melted.
  • Assemble the acorns: Put a small dab of melted peanut butter on one side of a Nutter Butter Bite. Immediately "glue" a Kiss to the Nutter Butter Bite. Set aside, and continue gluing the rest of the Kisses. After a minute or two they will harden enough to add the acorn tops.
  • Add the acorn tops: Put a tiny dab of melted peanut butter on the top of the acorn and top with a chocolate or peanut butter chip. Set aside to harden.

Hershey's milk chocolate Kisses, unwrapped
Mini vanilla wafers
Butterscotch or Peanut Butter chips, about 1/4 cup
Additional chips for tops
Toothpick

Steps:

  • It helps to have everything laid out in front of you before beginning. In a small condiment or custard bowl, microwave about 1/4 cup chips on High, a few seconds at a time, stirring in between and being careful to not burn them. This will be used as "glue" for attaching the kisses and chips to the vanilla wafers. Using the toothpick, apply a small amount of the "glue" to the center of the flat side of a vanilla wafer. Immediately place a Hershey's kiss over the "glue", pressing and holding in place for a second or two. (At this point, it should be stuck.) Lay aside on a serving tray or on the counter. Repeat the process for as many "acorns" as desired. If the "glue" gets too thick, re-warm slightly. (The chips on top will be put on later.) After all the Hershey's kisses have been attached, attach a chip to the top of each "acorn" in pretty much the same manner above, maybe using a tad less "glue".
