1 cup egg whites, room temperature
1 cup sugar
1 cup powdered sugar
2 cups heavy cream
2 teaspoons sugar
10 strawberries, cut in half
1 kiwi, peeled and sliced
20 blueberries
20 mint leaves

Steps:

  • Whip whites until foamy. Gradually add sugar and whip until very, very stiff, about 5 minutes. On low speed gradually add powdered sugar and whip 10 seconds. Do not over mix!
  • With a large star tip pipe onto a parchment paper lined sheet pan either finger shapes or round rosettes. Let dry overnight over a hot oven or place in a 200 degree oven for 4 hours.
  • Whip cream with sugar until stiff. Pipe whipped cream on finger shaped meringue and top with another finger to form a sandwich. Tuck sliced fruit and mint leaves into cream laying meringue on its side. For rosette meringues, pipe cream on top an place fruit and mint leaves on cream.

If you are making two pies and using 6 or more egg whites, just double up and use 2 tbsp of cornstarch, 4 tbsps cold water and 1 cup boiling water, and follow same method.

1 tablespoon cornstarch
2 tablespoons cold water
1/2 cup boiling water
3 egg whites
7 tablespoons sugar
1 1/2 teaspoons vanilla

Steps:

  • In a saucepan, blend the cornstarch with the water.
  • Add the boiling water, and cook, stirring until clear and thickened.
  • Let stand until COMPLETELY COLD ( I just put it in the fridge for an hour to speed up the cooling process, but by all means it can sit out at room temperature too).

  • Gradually add in the sugar; beat until stiff, but not dry.
  • Turn the mixer to low speed; add in the salt and vanilla.
  • Gradually beat in the cold cornstarch mixture.
  • Turn the mixer onto high again; beat well.
  • Spread the meringue over cooled pie filling sealing the meringue to the pie crust.
  • Bake at 350 degrees for 10 minutes, or until the meringue is lightly browned.

225g caster sugar
1 tsp vanilla extract
plus your choice of flavourings (see below)

Steps:

  • Heat oven to 140C/120C fan/gas 1. Line 2 baking sheets with baking parchment and set up a piping bag with a medium-size star nozzle.
  • In a clean bowl, whisk the egg whites until very stiff - the whites should stand in stiff, not floppy, peaks when the beaters are lifted out. Once you have reached this point, pour in roughly half the sugar and the vanilla extract and whisk again until the mixture becomes very thick, firm and shiny. Add the remaining sugar and whisk again until thick, firm and shiny. If you like meringues with soft, mallowy centres, just add 1 tsp cornflour and 1 tsp white wine vinegar to the mix along with the sugar.
  • Carefully spoon the meringue into the piping bag. Push any air out of the top and tightly twist the end of the piping bag to seal. Gently squeeze until meringue is visible at the end of the nozzle, then begin piping onto your lined baking sheets. Carefully dip the base of each meringue in to coat, then place on their sides on a plate or tray to set. While the chocolate sets, whip 300ml double cream.
