TURKEY KOFTA KABOBS

Turkey Kofta Kabobs image

My Persian neighbor introduced me to kofta about 20 years ago. His were made of beef and I never actually got his recipe but I'm pretty good at replicating flavors and these came pretty close...and of course using turkey instead of beef makes these a lot lighter.

KOFTA - GROUND BEEF KABOBS

Kofta - Ground Beef Kabobs image

I am posting this for the ZWT 2006. The recipe calls for extra finely ground beef. Ask your butcher or the meat department to run the beef through the grinder one or two extra times. It makes a difference in the recipe - the meat will be smooth and soft. It is best to cook these on flat skewers, not round. They can be baked in the oven or on the grill. This is thanks to the About Web site.

VEGETARIAN KOFTA KABOBS

This makes a spicy and healthy version of one of my favorite dishes. Serve with tabbouleh, pita bread and olives for a wonderful feast. Black beans or chickpeas can be substituted for adzuki beans. Adjust hot sauce and garlic to your tastes.

Time 1h25m

Yield 8

Number Of Ingredients 16

1 cup bulgur
2 cups vegetable broth or stock
1 (18.75 ounce) can adzuki beans
2 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
2 tablespoons chopped fresh cilantro
2 teaspoons hot pepper sauce
1 egg, beaten
1 cup stale whole wheat bread cubes
1 cup skim milk
salt and freshly ground black pepper to taste
1 tablespoon olive oil
8 (12-inch) skewers

Steps:

  • Combine the bulgur wheat and vegetable stock in a saucepan. Bring to a boil, then simmer for about 10 minutes, or until liquid has been absorbed. Set aside to cool.
  • Meanwhile, in a large bowl, combine the adzuki beans, 2 tablespoons of olive oil, onion, garlic, cumin, coriander, cilantro, hot sauce, and the egg. Mash with a potato masher or sturdy whisk until fairly smooth. Soak the bread in milk, then squeeze out the excess; add to the bean mixture along with the bulgur. Mix using your hands until everything is well blended. Cover, and refrigerate for 1 hour, or until firm.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Wet your hands, and form the kofta into 32 oval shapes. Press onto skewers four at a time. Brush with remaining olive oil. Place on a baking sheet or broiling pan.
  • Bake for 10 to 15 minutes in the preheated oven. Turn over, brush again with oil, and continue baking for 5 to 10 minutes, until crispy.

Tips:

  • Choose the right meat: Use a combination of lamb and beef for the best flavor. If you prefer a leaner option, you can use ground turkey or chicken.
  • Season the meat well: Don't be afraid to use plenty of spices and herbs to flavor the meat. Common spices used in kofta kabobs include cumin, coriander, paprika, and chili powder.
  • Don't overmix the meat: Overmixing the meat will make the kabobs tough. Mix the meat just until it is combined.
  • Form the kabobs evenly: Use a kabob skewer to form the kabobs. Make sure the kabobs are evenly shaped so that they cook evenly.
  • Cook the kabobs over medium heat: Cook the kabobs over medium heat to prevent them from burning. The kabobs should be cooked through when they reach an internal temperature of 165 degrees Fahrenheit.
  • Serve the kabobs with your favorite sides: Kofta kabobs can be served with a variety of sides, such as rice, vegetables, or salad.

Conclusion:

Kofta kabobs are a delicious and easy-to-make dish that can be enjoyed by people of all ages. By following the tips above, you can make sure that your kofta kabobs are flavorful and cooked to perfection. Whether you are looking for a quick and easy weeknight meal or a dish to impress your friends and family, kofta kabobs are a great option.
