1 cup uncooked elbow macaroni
1/4 cup soy milk
2 tablespoons crumbled soft tofu
1/3 cup canola oil
4 teaspoons nutritional yeast flakes, optional
2 teaspoons reduced-sodium soy sauce
1 teaspoon ground turmeric
1/8 teaspoon garlic salt
1/8 teaspoon paprika
2 teaspoons margarine

Steps:

  • Cook macaroni according to package directions. Meanwhile, place soy milk and tofu in a blender. While processing, gradually add oil in a steady stream. Add the yeast flakes if desired, soy sauce, turmeric, garlic salt and paprika; cover and process until smooth., Drain macaroni; toss with sauce mixture. 2 tbsp olive oil
2 tbsp plain flour
500ml lactose-free milk
125g Parmigiano-Reggiano finely grated
2 tsp Dijon mustard
250g elbow macaroni or short pasta
3 tbsp dried breadcrumbs
pinch of paprika or cayenne pepper

Steps:

  • Whisk the olive oil and flour together in a saucepan until smooth, then warm over a medium heat until lightly golden and thickened slightly. Add the milk a splash at a time, whisking continually, until a smooth white sauce forms. Cook for 2 mins more until thick enough to coat the back of a spoon. Stir in 100g of the Parmigiano-Reggiano and the Dijon mustard, then cook for another 1-2 mins until melted. Season well.
