Time 30m

Yield 4 to 6 servings

Number Of Ingredients 10

1/2 cup creamy peanut butter
1/2 cup cocoa powder
1/4 cup honey
1 teaspoon cinnamon sugar (or a pinch of cinnamon and a teaspoon of sugar)
2 large avocados, halved, pitted and peeled
4 to 6 stalks celery (be sure to pick ones that can hold filling), cut into thirds, leaves set aside
4 ounces raspberries (ladybugs)
10 to 20 raisins (ants)
10 to 20 dried cherries (red ants)
10 to 20 pretzels or thin pretzel sticks (worms or stick bugs)

Steps:

  • For the filling: Add the peanut butter, cocoa powder, honey, cinnamon sugar and avocado to a food processor and blend on high until smooth and aerated. Scoop into a piping bag or sealable plastic bag. Refrigerate for 10 to 15 minutes.
  • For the logs and insects: Choose a tip for piping or cut a hole in the corner of the plastic bag. Place the celery leaves in the recess of the celery stalks and pipe the filling over them, leaving a bit of the leaves sticking up on the sides of each. Top with one of each "insect"--a raspberry, raisin, dried cherry and pretzel--along the length or make logs to your liking.

LADYBUGS ON A LOG

I came up with this variation on Ants on a Log for Thanksgiving because my brother hates raisins. They would also work well for schools or daycares with nut-free rules for snacks and lunches.

Time 20m

Yield 12 ladybugs on a stick

Number Of Ingredients 5

12 red seedless grapes
12 strawberries, with stems (read *Note)
miniature dark chocolate chips or black dried currant
12 green toothpicks (or wooden skewers)
lettuce leaf (green paper leaves or green Easter grass)

Steps:

  • *Note: I found it easier to slice off a small section on the back of the strawberries (meaning from the stem to the bottom of the berry.) That way it will lay flat on the plate and easier to attach the chocolate chips. They won't be so wobbly. Ask an adult for help.
  • HEAD: Place a grape on a toothpick or wooden skewer, sliding it all the way to the end of the stick.
  • BODY: Next place the strawberry on the skewer, stem end first, and slide it down to touch the grape.
  • SPOTS: Lay the ladybug down and carefully push the pointed ends of several chocolate chips (or dried currants) into the strawberry to make the ladybug's spots.
  • PRESENTATION: Place several large lettuce leaves (or paper leaves or Easter grass) on a pretty platter. Arrange the ladybugs on the leaves.

Tips:

  • Choose ripe bananas. The riper the bananas, the sweeter and creamier your "logs" will be.
  • Use a sharp knife to cut the bananas. This will help you get clean, even cuts.
  • Be careful not to overmix the peanut butter and cream cheese mixture. You want it to be smooth and creamy, but not runny.
  • If you don't have a piping bag, you can use a zip-top bag with the corner snipped off.
  • Be patient when dipping the bananas in the chocolate. It takes a few minutes for the chocolate to set.
  • Store the Ladybug Logs in the refrigerator for up to 2 weeks.

Conclusion:

Ladybug Logs are a fun and easy treat that is perfect for parties, picnics, or just a snack. They are also a great way to get kids to eat their fruit. With a few simple ingredients, you can create a delicious and festive treat that everyone will love.
