Time 1h15m

Number Of Ingredients 6

1 1/4 pounds boneless lamb shoulder, cut into 1-inch pieces
Coarse salt and ground pepper
1 bunch leeks (1 1/2 pounds), white and light-green parts only, halved lengthwise, rinsed well, and thinly sliced crosswise
5 1/2 cups low-sodium chicken broth
3/4 pound small potatoes, halved or quartered if large
1/3 cup roughly chopped fresh parsley, for serving

Steps:

  • Season lamb with salt and pepper. In a large Dutch oven or heavy pot, cook lamb over medium until some of the fat has rendered, about 4 minutes. Increase heat to high and cook, stirring occasionally, until lamb is browned on all sides, 4 minutes. Add leeks and cook, scraping up any browned bits from the bottom of the pot, until leeks are translucent, 4 minutes. Add broth.
  • Bring mixture to a boil. Reduce heat and simmer, partially covered, 45 minutes. Add potatoes and cook until potatoes and lamb are tender when pierced with a knife, 15 minutes. Season to taste with salt and pepper. To serve, top with parsley.

Tips:

  • Choose the right cut of lamb. Lamb shoulder or lamb neck are both good choices for stew, as they are both flavorful and relatively inexpensive cuts of meat.
  • Brown the lamb before stewing. This will help to develop the flavor of the meat and give the stew a nice color.
  • Use a variety of vegetables in your stew. This will add flavor, color, and nutrients to the dish. Some good choices include potatoes, carrots, celery, onions, and garlic.
  • Season the stew well. Salt, pepper, and herbs are all essential seasonings for lamb stew. You can also add other spices, such as cumin, paprika, or chili powder, to taste.
  • Simmer the stew for at least 1 hour. This will allow the meat and vegetables to become tender and the flavors to meld together.
  • Serve the stew with a side of bread or rice. This will help to soak up the delicious sauce.

Conclusion:

Lamb and potato stew is a hearty and flavorful dish that is perfect for a cold winter day. It is also a relatively inexpensive and easy-to-make dish, making it a great option for busy weeknights. With a few simple tips, you can make a delicious lamb and potato stew that your family and friends will love.
