LAMB CHOPS WITH BALSAMIC REDUCTION

Lamb Chops with Balsamic Reduction image

This recipe for lamb chops is a favorite in my house. It is an easy and quick recipe for two people (we eat two chops each). Rosemary and thyme give it great flavor. If you double the recipe, remember that the sauce will take longer to reduce.

Time 40m

Yield 4

Number Of Ingredients 10

¾ teaspoon dried rosemary
¼ teaspoon dried basil
½ teaspoon dried thyme
salt and pepper to taste
4 lamb chops (3/4 inch thick)
1 tablespoon olive oil
¼ cup minced shallots
⅓ cup aged balsamic vinegar
¾ cup chicken broth
1 tablespoon butter

Steps:

  • In a small bowl or cup, mix together the rosemary, basil, thyme, salt and pepper. Rub this mixture onto the lamb chops on both sides. Place them on a plate, cover and set aside for 15 minutes to absorb the flavors.
  • Heat olive oil in a large skillet over medium-high heat. Place lamb chops in the skillet, and cook for about 3 1/2 minutes per side for medium rare, or continue to cook to your desired doneness. Remove from the skillet, and keep warm on a serving platter.
  • Add shallots to the skillet, and cook for a few minutes, just until browned. Stir in vinegar, scraping any bits of lamb from the bottom of the skillet, then stir in the chicken broth. Continue to cook and stir over medium-high heat for about 5 minutes, until the sauce has reduced by half. If you don't, the sauce will be runny and not good. Remove from heat, and stir in the butter. Pour over the lamb chops, and serve.

Grilled Lamb Chops with Fresh Herbs image

Enjoy fresh herbs with these grilled lamb chops. I used what was in my garden: mint, rosemary, parsley, and chives. You may use whatever combination you like! Lamb is very delicate and will stay tender and tasty at medium-rare. Lamb chops grill very quickly, so watch them closely.

Categories     Lamb     Onion     Sauté     Quick & Easy     Bon Appétit

Yield Serves 4

Number Of Ingredients 8

4 large lamb loin chops
1 tablespoon olive oil
2 medium onions, sliced
4 small garlic cloves, chopped
2 tablespoons currants
1/2 cup dry red wine
1/4 cup balsamic vinegar or 3 tablespoons red wine vinegar
1/2 teaspoon dried rosemary, crumbled

Steps:

  • Season both sides of lamb chops with salt and pepper. Heat olive oil in heavy large skillet over medium-high heat. Add lamb to skillet. Sprinkle onions over lamb. Cook until lamb is brown, stirring onions occasionally, about 7 minutes. Turn lamb chops and cook on second sides until lamb is cooked to desired doneness, about 5 minutes for medium-rare. Transfer lamb to platter; cover with foil and keep warm.
  • Add garlic to onions in skillet and sauté 1 minute. Stir in currants and sauté 1 minute longer. Add remaining ingredients and boil until liquid is reduced to glaze, about 3 minutes. Season to taste with salt and pepper. Spoon onion mixture over lamb chops.

Tips for Perfecting Lamb Chops with Balsamic Glaze:

  • Choose high-quality lamb chops: Opt for chops that are well-trimmed and have a good amount of marbling. This will ensure tender and flavorful meat.
  • Marinate the lamb chops: Marinating the chops in a flavorful mixture of herbs, spices, and olive oil helps tenderize the meat and infuse it with delicious flavors. Allow the chops to marinate for at least 30 minutes, or up to overnight.
  • Cook the lamb chops over high heat: To achieve a nice sear and caramelized crust, cook the lamb chops over high heat for a short period of time. This will help lock in the juices and prevent the meat from drying out.
  • Use a meat thermometer: To ensure that the lamb chops are cooked to your desired doneness, use a meat thermometer. The internal temperature should reach 145°F (63°C) for medium-rare, 155°F (68°C) for medium, and 165°F (74°C) for well-done.
  • Make the balsamic herb glaze: While the lamb chops are cooking, prepare the balsamic herb glaze by simmering balsamic vinegar, honey, and herbs in a saucepan until it thickens. This glaze adds a sweet and tangy flavor to the lamb chops.
  • Baste the lamb chops with the glaze: Once the lamb chops are cooked, brush them with the balsamic herb glaze. This will help caramelize the crust and add extra flavor.

Conclusion:

Lamb chops with balsamic herb glaze are a delicious and elegant dish that is perfect for any special occasion. By following these tips, you can create perfectly cooked lamb chops that are tender, flavorful, and bursting with flavor. Serve the lamb chops with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad, for a complete and satisfying meal.
