Beef and Cabbage (Lazy Golumpki) image

Grew up eating golumpki. Yes I'm mostly Polish, but always wanted more sauce on them and didn't like the 'mushiness' of the burger inside. This is the version I came up with and hope you enjoy!

UNSTUFFED CABBAGE ROLL

Unstuffed Cabbage Roll image

This is a quick and easy main dish. My kids don't even like cabbage, but they love this. I usually try to serve it with green beans, new potatoes, corn, and a pan of corn bread. They eat over half the pan every time. Also, the longer it stands the better it tastes.

HALUPKI CASSEROLE (STUFFED CABBAGE CASSEROLE)

Halupki Casserole (Stuffed Cabbage Casserole) image

This casserole will provide the same great taste and comfort food factor of stuffed cabbage without all the time and effort. It freezes and reheats well if not even better than the first day, just like traditional stuffed cabbage.

Time 2h20m

Yield 10 serving(s)

Number Of Ingredients 12

2 lbs ground beef (ground round or sirloin are best)
1 cup rice
1 bell pepper (red or green)
4 garlic cloves
1 onion
4 tablespoons butter, melted
28 ounces tomato sauce
1 cup brown sugar (or to taste)
1 1/2 cups water
2 tablespoons garlic salt
2 teaspoons black pepper
4 cups cabbage

Steps:

  • Chop garlic, pepper, and onion.
  • In a large bowl add melted butter, 1 T garlic salt, and 1 T black pepper to the chopped vegetables.
  • Add UNCOOKED rice and RAW ground beef and mix really well.
  • In a medium bowl mix tomato sauce, brown sugar, 1 T garlic salt, 1 T black pepper, and water. Adjust season to your taste. We like it a little sweeter so I usually use about 1 1/2 c brown sugar.
  • In a 9" x 13" pan spread half of the sliced cabbage, enough to cover the bottom.
  • Loosely cover the cabbage with the meat mixture. Don't press the meat down just lay it on top of the cabbage.
  • Cover meat with remaining sliced cabbage and pour sauce over the top.
  • Cover with aluminum foil and bake at 350 for about 2 hours or cabbage is soft.

Tips:

  • Use a variety of cabbage leaves. Savoy cabbage, green cabbage, and red cabbage all work well in this dish. The different colors and textures will add visual interest to your casserole.
  • Don't overcook the cabbage leaves. You want them to be tender but still have a little bit of crunch. Overcooked cabbage leaves will be mushy and unpleasant.
  • Use a variety of fillings. In addition to rice and ground beef, you can also add other fillings to your halupki casserole, such as sausage, kielbasa, mushrooms, onions, or sauerkraut. Get creative and experiment with different flavors.
  • Use a flavorful sauce. The sauce is what really brings the flavors of halupki casserole together. Be sure to use a sauce that you enjoy, such as a tomato sauce, a cream sauce, or a combination of the two.
  • Bake the casserole until it is golden brown and bubbly. This will ensure that the casserole is cooked through and that the cheese is melted and gooey.

Conclusion:

Halupki casserole is a delicious and easy-to-make dish that is perfect for a lazy day meal. It is also a great way to use up leftover cabbage leaves. With its variety of fillings and flavorful sauce, halupki casserole is sure to be a hit with your family and friends.
