PASTA WITH PARSNIPS AND BACON

Pasta With Parsnips and Bacon image

They may seem like an unlikely duo, but pasta and parsnips work really well together, with the parsnips becoming almost like a sweet and soft extension of the pasta. And they're another vehicle for the creamy, bacon-rich sauce. You can roast the parsnips several hours ahead (they'll be fine at room temperature). But the rest of the dish is best made just before serving. Then serve it hot. There are few dishes that are cozier on a cold winter night.

Time 45m

Yield 2 servings

Number Of Ingredients 9

3 medium parsnips (3/4 pound), peeled and cut into 1/2-inch pieces
1 1/2 tablespoons extra-virgin olive oil, more for drizzling
Kosher salt and black pepper, as needed
1/2 pound dried campanelle or farfalle pasta
1/4 pound bacon, diced
1 medium leek, thinly sliced
3/4 cup heavy cream
2/3 cup grated Parmesan cheese
2 tablespoons chopped parsley

Steps:

  • Heat oven to 400 degrees. Toss parsnips with oil and season with salt and pepper. Roast, tossing occasionally, until parsnips are golden and tender, about 25 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package instructions until 1 minute before it's al dente. Drain.
  • In a large skillet over medium-high heat, brown the bacon until crisp, about 5 minutes; use a slotted spoon to transfer bacon to a paper-towel-lined plate to drain. Discard all but 1 tablespoon of fat from the pan.
  • Return skillet to heat and add leeks. Cook in remaining bacon fat until softened, about 5 minutes. Stir in heavy cream and cooked bacon. Simmer mixture until slightly thickened, 2 to 3 minutes.
  • Stir in pasta, parsnips and cheese. Simmer until heated through and cheese is melted, then remove from heat. Season with salt and pepper; toss with parsley. Serve drizzled with olive oil, with plenty of black pepper on top.

Categories     Vegetable

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 16

coarse salt
1 lb elbow macaroni
1 tablespoon extra virgin olive oil
8 slices bacon, coarsely chopped
2 large leeks, trimmed of roots and dark green tops
coarse black pepper
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1/2 teaspoon cayenne pepper
1 teaspoon paprika
3 cups whole milk
1 cup chicken stock or 1 cup broth
3 1/2 cups grated gruyere cheese
1 tablespoon Dijon mustard
1 pint cherry tomatoes
3/4 cup plain breadcrumbs

Steps:

  • Place a pot of water on to boil for the pasta. When the water reaches a boil, add some salt and the pasta, and cook until al dente.
  • While the pasta cooks, heat a large skillet over medium heat. Add extra-virgin olive oil and chopped bacon and cook until crisp.
  • While bacon is cooking, split the trimmed leeks in half lengthwise, lay the leeks cut side down and thinly slice into half-moons. Fill a large bowl with water and mix the leeks into the water.
  • Allow the water to settle and the dirt and the grit to settle to the bottle of the bowl. Using your hands, draw the leeks from the water, taking care not to unsettle the dirt.
  • Drain the cleaned leeks on a kitchen towel, pat dry and, and then add to the pan with the bacon. Season the leeks with salt and pepper. Cook until leeks are tender, about 3 to 4 minutes.
  • To start the cheese sauce, heat a medium sauce pot over medium heat. Add the butter and melt, then add the flour, cayenne, and paprika and whisk together over the heat until the roux bubbles; cook for 1 minute more.
  • Whisk in the milk and stock and raise the heat a little. Bring the sauce to a quick boil and simmer to thicken, about 5 minutes.
  • Remove the sauce from the heat and whisk in 3 cups of the grated cheese and the mustard. Set aside.
  • Add the cherry tomatoes to the leeks and continue to cook for 2 minutes. Remove from the heat and reserve.
  • Preheat the broiler.
  • Drain the pasta and add it back to the pasta pot. Combine the reserved leek mixture and the cheese sauce with the pasta. Season with salt and pepper to taste.
  • Transfer the pasta to a baking dish. Combine the remaining ½ cup of grated cheese with the bread crumbs.
  • Top the pasta with the mixture. Place the dish under the broiler until the cheese melts and the bread crumbs are brown.

Tips:

  • Choose the Right Leeks: Select medium-sized leeks with firm, white bulbs and dark green leaves. Trim the root ends and remove any tough outer leaves before slicing.
  • Slice the Leeks Thinly: To ensure even cooking, slice the leeks into thin, half-moon shapes. This will help them caramelize and soften quickly in the pan.
  • Use Good Quality Bacon: Opt for thick-cut bacon with a good amount of fat for maximum flavor. Pancetta or guanciale can also be used as alternatives.
  • Render the Bacon Slowly: Cook the bacon over low heat to allow it to slowly render its fat and develop a crispy texture. Avoid high heat, as this can burn the bacon and make it tough.
  • Don't Crowd the Pan: When cooking the leeks and bacon together, avoid overcrowding the pan. This will prevent them from cooking evenly and may result in steamed vegetables.
  • Season Generously: Don't be shy with the salt and pepper. Season the leeks and bacon liberally to enhance their flavors.
  • Use a High-Quality Pasta: Choose a pasta that will hold its shape well during cooking. Short pastas like penne or rigatoni work well, as do longer pastas like spaghetti or fettuccine.
  • Cook the Pasta Al Dente: Cook the pasta according to the package instructions, but aim for an al dente texture. This means the pasta should be tender but still have a slight bite to it.
  • Reserve Some Pasta Water: Before draining the pasta, reserve about a cup of the starchy pasta water. This can be added to the sauce to help create a creamy, flavorful consistency.
  • Toss the Pasta with the Sauce: Once the sauce is ready, toss the cooked pasta with the sauce until well coated. This will help distribute the flavors evenly throughout the dish.
  • Garnish with Fresh Herbs: For a finishing touch, sprinkle some freshly chopped parsley, basil, or chives over the pasta before serving. This will add a pop of color and freshness.

Conclusion:

Leek, bacon, and pasta is a classic combination that is both delicious and versatile. With its smoky bacon flavor, sweet caramelized leeks, and al dente pasta, this dish is sure to please everyone at the table. Whether you're looking for a quick and easy weeknight meal or a special occasion dish, this recipe is sure to become a favorite.
