1 ½ pounds (about 15) mini multi-colored potatoes
12 ounces green beans
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 clove garlic, crushed
1 teaspoon Dijon mustard
Zest from one lemon
1 teaspoon salt
¼ teaspoon pepper
¼ teaspoon oregano, plus more for garnish
¼ red onion, sliced

Steps:

  • Quarter the potatoes if you are using the ones that are about 2 inches. If you are using larger potatoes, chop them into cubes.
  • Put the cut potatoes in a medium pot and cover with water. Bring to a boil and cook for about 5 to 7 minutes until the potatoes are cooked but still firm.
  • Meanwhile, trim off the ends of the green beans and chop them into 2-inch pieces. Add them to a steamer basket and place it over a pot of boiling water. Steam them for about 8 minutes.
  • While the potatoes and beans are cooking, make the dressing: mix together the olive oil, vinegar, garlic, mustard, lemon zest, salt, pepper, and oregano.
  • Add the cooked potatoes and green beans to a bowl and add the sliced onions.
  • Top with the dressing and stir. Taste for seasonings adjust as necessary.
  • Garnish with extra oregano. Eat right away or chill and serve as a cold salad.

1 10 3/4-oz can cream of mushroom soup
3/4 cup milk
1/8 tsp ground black pepper
2 cans green beans, drained, or two 9-oz packages frozen green beans, thawed
1 cup French's French Fried Onions, divided

Steps:

  • Preheat oven to 350°F. Mix soup and milk, then add pepper and green beans. Stir in cup French fried onions. Pour into a 1 1/2 quart casserole. Bake for 30 minutes or until hot. Remove from oven and stir casserole. Top with prepared mashed potatoes. Adjust oven to broil. Toast potatoes under broiler until lightly brown, about 2 minutes. 2 pounds potatoes, preferably Idaho, peeled and quartered
Salt and freshly ground black pepper
1 cup heavy cream
1/2 cup (1 stick) butter
1 pound green beans, trimmed
Olive oil
2 to 3 strips bacon (about 2 ounces), cut crosswise into pieces
1 onion, thinly sliced
1 can (28 ounces) whole, peeled tomatoes
1/2 teaspoon sugar
Salt and freshly ground black pepper

Steps:

  • You can boil the potatoes and steam the beans at the same time. Start with the potatoes: put them in a large pot and cover with cold water. Add 1 tablespoon salt and bring to a boil. Reduce the heat and simmer, uncovered, until the potatoes are tender when you stick a fork in them, about 30 minutes. At the same time, combine the cream and butter in a small saucepan and warm over low heat until the butter is melted. Remove from the heat and cover to keep warm.
  • While the potatoes are cooking, start on the beans. Break the beans in half and put them in a colander large enough to fit over the pot the potatoes are cooking in; set aside. Now heat a large saucepan over medium heat. Drizzle 2 tablespoons of olive oil, add the bacon and cook until the fat is rendered, about 5 minutes. Add the onion and cook, stirring, until softened, about 3 minutes. Add the tomatoes to the pan, crushing them in your hand as you do so, to break them up. Stir in the sugar. Bring to a boil, reduce the heat and simmer, uncovered, until thickened, 7 to 8 minutes. Remove from the heat.
  • When the potatoes have cooked about 20 minutes, put the colander over the pot and cover the whole thing with aluminum foil. Continue cooking until the beans are crisp-tender, 5 to 7 minutes. Remove the colander from pot and dump the beans into the pan with the tomato sauce; fold in the beans and season with salt and pepper.
  • Now drain the potatoes in the same colander and dump them back into the pot. While the potatoes are still hot, pour in the warm cream and butter and mash the potatoes with a potato masher. Season with salt and pepper.

1 (14.5 ounce) can green beans, drained
½ medium onion, minced
2 cloves garlic, minced
1 tablespoon vegan butter (such as Earth Balance®)
4 cups water
2 packets vegetable bouillon
½ tablespoon vegetable base (such as Better than Bouillon®)
2 tablespoons cornstarch
1 tablespoon all-purpose flour
2 ¼ cups French-fried onions

Steps:

  • Place potatoes and olive oil in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 12 minutes. Drain and set aside to cool for 2 minutes.
  • Transfer potatoes to a large bowl. Add 1/2 cup vegan butter, pepper, and salt and mash with a fork until combined and potatoes are smooth.

My Husband brought home a special from work which was Fried Chicken, mashed potatoes and green beans that had bacon as an ingredient. We ate half of it and the next night I wanted to use the rest of it but didn't want to heat in an oven so I created a casserole and some potato pancakes. It was the best and we ate leftovers of that the next night....awesome flavor and tasty

2 or more - breasts or other parts of left over fried chicken, pull from bone and shred with or without skin and breading
1 cup(s) chicken broth
1/2 cup(s) sour cream
1/3 cup(s) flour and salt and pepper to taste
1/2 teaspoon(s) cumin
1/2 teaspoon(s) cayenne pepper
1/2 teaspoon(s) garlic powder
1/2 teaspoon(s) chipotle seasoning
1-2 cup(s) smashed potatoes
1 sm - onion, carmelized in butter
1-2 cup(s) leftover green beans cooked with bacon
1 cup(s) cheddar cheese, shredded
1/2 cup(s) panko bread crumbs
2-3 tablespoon(s) melted butter, to drizzle on top of the casserole

Steps:

  • Take your fried chicken and strip it of all the meat and some of the skin and place it in a bowl.
  • In a sauce pan warm up the chicken stock and sour cream add in your seasonings, then add flour and some of the cheese to thicken
  • Now take the green beans and spread on the bottom of the small casserole dish, then place the shredded chicken on top of that and when the sour cream mixture is thickened pour over the top, shred the cheese on top of that and sprinkle the Panko on top and drizzle the butter on top of that.
  • place in a 350 deg oven and start on the potatoe pancakes
  • Place your Potatoes in a bowl and add an egg and mix in, then add the flour...in a small pan saute your onion until caramelized and add to the potatoes, stir and when casserole is about ready to take out of the oven start the potato pancakes
  • For the potato pancakes you need butter in the pan, I don't care how much but it should be enough to almost deep fry in...by tablespoonfuls drop into the fry pan, 4 should fit in the pan...brown nicely and place on paper towels
