Spread the Cornbread Stuffing in the prepared baking dish, then sprinkle over the Roasted Vegetables and Roasted Turkey Breast. Pour the egg mixture over the top. Bake until golden brown and set, 35 to 40 minutes. Let cool for 5 minutes before slicing. Garnish with the cranberry sauce, if using.
  • Melt the butter in a skillet over medium heat. Whisk in the flour and cook until golden, 1 to 2 minutes. Whisk in the warmed stock. Bring to a simmer and cook, stirring constantly, until thickened, 10 to 15 minutes. The mixture should coat the back of a spoon. Pour in the wine, stir and cook for an additional 2 to 3 minutes. Season to taste with salt and pepper.
  • Preheat the oven to 350 degrees F.
  • Melt the coconut oil over medium heat in a large skillet. Saute the onion, celery and carrots until tender, 8 to 10 minutes. Remove from the heat and put into a large bowl. Add the cornbread croutons, seasoned croutons, thyme, rosemary, sage and cayenne if using. Add the chicken stock and stir to combine. Taste and add salt and pepper, then stir in the eggs. • Add 1 tablespoon of the coconut oil to a 6-inch cast-iron skillet. Put the skillet in the oven and allow to heat until very hot, 6 to 8 minutes.
  • Combine the cornmeal, flour, baking powder and 1 teaspoon salt in a large bowl with a whisk. In a different bowl, combine the almond milk, applesauce, sorghum, egg and 2 tablespoons coconut oil. Make a well in the center of the dry ingredients and pour in the wet. Fold to combine.
  • Carefully remove the skillet from the oven and pour in the batter. Return the skillet to the oven and bake until golden with a crisp crust, 25 minutes. Let cool before cutting the cornbread into 1-inch pieces (about 8 cups).
  • Reduce the oven to 350 degrees F.
  • Grease a baking sheet with some coconut oil and spread the cornbread in a single layer. Be careful, the cornbread is fragile and you dont want to be rough with it. Drizzle lightly with the remaining 2 tablespoons coconut oil and sprinkle with salt and pepper. Cook, stirring halfway through, until golden brown and crunchy, 30 to 40 minutes. Cool on the baking sheet before using.

"LEFTOVER ROAST" MEXICAN CASSEROLE

I had some leftover Mexican roast beef and didn't really know what to do with it. I threw a bunch of stuff into a pan and simmered it for awhile. The mixture tasted wonderful! I had thought to make tacos, but then I got lazy, so I made it into a layered casserole instead. This is a very friendly versatile recipe as you can use leftover beef roast or pork roast, and vary your ingredients and spices to suite your tastes. Also, I like to make the casserole up in the morning, then toss it into the oven just before dinner time. Makes a hectic time just a little easier. Note: You can make a "Mexican" roast by cooking a roast in the crock-pot with salsa.

LEFTOVER TEX-MEX PORK CASSEROLE

Leftover Tex-Mex Pork Casserole image

My family calls these kinds of dishes my "concoctions". We had a couple of thick-cut pork chops left over, so I decided to adapt a tex-mex chicken casserole I've made that the family loves. I added a little too much "juice" to the casserole and the tortilla chips were very soggy. Next time I'll try for a crispy taste. I have frozen red, green, yellow and orange bell peppers, already chopped, so I included a variety of them in this dish for color.

Provided by Good Cook Wanda

Categories     < 60 Mins

Time 50m

Yield 6-8 serving(s)

Number Of Ingredients 15

3 cups pork, 1/2 inch cubes
1 1/2 cups bell peppers, chopped 1/2 inch pieces
1/2 cup onion, coarsely chopped
2 garlic cloves, minced
2 tablespoons olive oil
1 tablespoon butter
1 (14 ounce) can whole tomatoes, drained (reserve)
1 cup chicken stock
2 teaspoons ground cumin
1 teaspoon dried basil
salt
pepper
1 cup mild cheddar cheese, coarsely grated
4 ounces Velveeta cheese, cut into 1/2 inch cubes
2 cups blue corn tortilla chips, slightly crushed

Steps:

  • Preheat oven to 375 degrees.
  • Coat a 9 x 13 glass casserole dish with non-stick spray. Evenly distribute crushed tortilla chips over bottom of the dish.
  • In a large skillet, heat oil and butter over medium until butter foams. Add bell peppers, onions and garlic. Saute' until soft.
  • Drain the canned tomatoes, reserving the juice. Crush them up some, just so not whole.
  • Add pork to skillet with vegies. Add crushed tomatoes, basil and cumin. Slowly add some of reserved tomato juice and chicken stock. This is where you need to do a lot of taste-testing. You need enough to moisten the ingredients but not too soupy, probably 3/4 cup total. Bring to a simmer for about 10 minutes.
  • Add salt and pepper to taste. I also added a pinch of sugar to tone down the acidic taste.
  • Pour over the chips. Top with Velvetta and cheddar cheese.
  • Bake at 375 for 15 - 20 minutes until cheese is melted and bubbly.

CHEESY LEFTOVER HAM CASSEROLE

Cheesy Leftover Ham Casserole image

I came up with this one to use up all of the Christmas ham that didn't get eaten. The only thing I might recommend is adding a little bit of salt or maybe garlic powder, but I am posting it as I made it because my step-daughter actually ate 2 helpings and that rarely happens. I hope you enjoy!

Provided by PSU Lioness

Categories     Ham

Time 40m

Yield 6 serving(s)

Number Of Ingredients 11

2 cups cooked rice (I used the 10 minute Success Boil-in-Bag whole grain rice)
1 -2 cup cooked ham, depending on how much you had leftover (the one that I used was a spiral sliced honey ham)
1 (10 ounce) can broccoli cheddar cheese soup, condensed
3/4-1 cup milk
1/4 cup sour cream
1/2 cup French-fried onions
1 (15 ounce) can peas
1/2 cup cheddar cheese, shredded
1/4 cup French-fried onions
1/2 cup cheddar cheese, shredded
1/4 cup crouton, finely crushed (measured AFTER the croutons have been crushed)

Steps:

  • Cook rice according to package directions.
  • Preheat oven to 350.
  • Pull or dice ham into small pieces.
  • Place rice in a 13x9" baking dish and top with ham and stir to combine. Use as much or as little ham as you would like. I used almost 2 cups because I had a lot leftover from Christmas dinner.
  • In a large bowl, mix broccoli cheddar soup, milk and sour cream. Start with 3/4 c milk and add more if you would like it a little runnier. I prefer my soup base a little thicker.
  • Stir 1/2 c french fried onions, peas and 1/2 c cheddar cheese into the soup mixture.
  • When combined, pour the soup mixture over the rice/ham mixture and stir well, but gently, to combine.
  • Sprinkle 1/2 c cheddar cheese over the rice/soup mixture.
  • Top this with 1/4 c (or more) french fried onions.
  • In a plastic bag, crush croutons. It took about 1/4 bag of croutons to get 1/4 cup of crushed croutons (and I used the cheesy garlic flavor).
  • Sprinkle crushed croutons over top of all.
  • Bake, uncovered, for 20-30 minutes or until the edges start to get bubbly and it is heated through.

Tips for Making the Best Leftover Casserole

  • Use a variety of leftovers. The more leftovers you use, the more complex and flavorful your casserole will be. Don't be afraid to mix and match different types of proteins, vegetables, and starches.
  • Don't overcook your leftovers. When you're reheating leftovers to use in a casserole, be careful not to overcook them. Overcooked leftovers will be tough and dry, and they won't taste as good in your casserole.
  • Use a creamy sauce or gravy. A creamy sauce or gravy will help to bind the ingredients in your casserole together and make it more flavorful. You can use a store-bought sauce or gravy, or you can make your own.
  • Top your casserole with cheese. Cheese is a classic casserole topping that adds flavor, richness, and texture. You can use any type of cheese that you like, but cheddar, mozzarella, and Parmesan are all good choices.
  • Bake your casserole until bubbly. The best way to tell if your casserole is done is to bake it until it's bubbly around the edges. This usually takes about 30 minutes, but it may vary depending on the size of your casserole and the ingredients you used.

Conclusion

Leftover casseroles are a great way to use up leftovers and create a delicious and satisfying meal. With a little planning and effort, you can make a leftover casserole that your whole family will love. So next time you have leftovers, don't throw them away! Instead, turn them into a delicious casserole that you can enjoy for dinner or lunch.
