Got leftover meatloaf and you're tired of sandwiches (like if anyone could be;) and you want something different? Try this very good recipe. Be careful though, the way that this is written it's very spicy. (Well at least to me anyway :)). I let this simmer for about 30 minutes for a better flavor. 1 1/2-2 cups leftover meatloaf (I used Crushed Saltine Meatloaf)
1/4 cup chili powder (I used Chili Seasoning Mix)
1 (15 ounce) can undrained pinto beans
1 (14 1/2 ounce) can undrained diced tomatoes
1 cup sharp cheddar cheese, divided (optional)

Steps:

  • In a medium sized saucepan, combine beans, tomatoes, and chili seasoning.
  • Heat and stir until seasonings are well blended.
  • Add meatloaf and stir until meat is heated, about 15 minutes.
  • Divide into two serving bowls, and if desired top with equal amount of cheese.

1 large onion, finely chopped
1/2 cup seasoned bread crumbs
1 small green pepper, chopped
2 large eggs, lightly beaten
1/2 cup chili sauce
2 tablespoons spicy brown mustard
3 to 4 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
2 pounds lean ground beef (90% lean)
Additional chili sauce, optional

Steps:

  • Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first 10 ingredients. Add beef; mix lightly but thoroughly. Shape into a 9-in. round loaf. Place loaf in center of strips in slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads at least 160°. If desired, spoon additional chili sauce over meat loaf; let stand 10 minutes. Using foil strips as handles, remove meat loaf to a platter., Freeze option: Cover and freeze leftover meat loaf slices in a greased 2-qt. shallow baking dish. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Reheat meat slices, covered, until a thermometer inserted in center reads 165°. ,

2 tablespoons olive oil
1 onion , chopped
3 cloves garlic, minced
1 to 2 jalapeno peppers, minced
2 to 3 cups crumbled leftover meatloaf
2 (14-ounce) cans diced tomatoes, undrained
1 (8-ounce) can tomato sauce
2/3 cup beef broth
2 (15-ounce) cans black beans, rinsed and drained
2 tablespoons chili powder
1 teaspoon cumin
1/2 teaspoon Tabasco sauce
Salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Gather the ingredients.
  • In large pot heat olive oil over medium heat. Add onion and garlic; cook and stir for 5 minutes. Add jalapeño pepper; cook and stir for 3 minutes.
  • Add meatloaf, diced tomatoes, tomato sauce, beef broth, black beans, chili powder, cumin, Tabasco, and salt and pepper to taste. Bring to a simmer; reduce heat to low and simmer for 25 to 35 minutes until slightly thickened.
