small handful flat-leaf parsley , chopped
½ tsp fennel seeds , roughly chopped

3 tbsp olive oil
6 bay leaves

  • Heat a barbecue, frying pan or griddle pan. Season the chops, then cook for 5-8 mins on each side until cooked through (if cooking in batches, wrap the cooked chops in foil while you finish the rest). Add the lemon quarters for the last min to char, then serve alongside the pork.

Tips:

  • For a more intense lemon flavor, use freshly squeezed lemon juice and zest. If you don't have fresh lemons on hand, you can use bottled lemon juice, but it won't have as much flavor.
  • Be sure to marinate the pork chops for at least 30 minutes, or up to overnight. This will help the flavors penetrate the meat and make it more tender.
  • Cook the pork chops over medium heat. If you cook them over too high heat, they will dry out and become tough.
  • Baste the pork chops with the marinade while they are cooking. This will help keep them moist and flavorful.
  • Serve the pork chops with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.

Conclusion:

Lemon barbecue pork chops are a delicious and easy-to-make dish that is perfect for a summer cookout or a weeknight meal. The lemon marinade tenderizes the pork chops and gives them a bright, citrusy flavor. The barbecue sauce adds a smoky, sweet flavor that complements the lemon perfectly. These pork chops are sure to be a hit with your family and friends.
