Steps:
- Slice the cucumbers. Simmer the cider vinegar, water and spices until fragrant. Pour over cucumbers in a glass or non-reactive bowl. You can put them in mason jars. Let sit until cool; refrigerate.
Tips:
- Choose firm and unwaxed cucumbers for pickling. English or Persian cucumbers are excellent choices.
- Use a sharp knife to thinly slice the cucumbers. This will help them absorb the pickling liquid more evenly.
- If you don't have pickling salt, you can use regular salt. Just be sure to reduce the amount you use by half, as pickling salt is more concentrated.
- To make the pickling liquid, simply combine vinegar, sugar, water, and spices in a large pot. Bring to a boil, then reduce heat and simmer for 5 minutes.
- Pour the hot pickling liquid over the cucumbers and let them cool to room temperature. Then, cover the pot and refrigerate the pickles for at least 24 hours before enjoying.
Conclusion:
Lemon cucumber pickles are a delicious and easy-to-make snack or side dish. They are perfect for summer gatherings or potlucks. With just a few simple ingredients and a little time, you can enjoy these refreshing pickles all season long. So next time you have a surplus of cucumbers, be sure to give this recipe a try.
