Tips:

  • Use fresh lemons for the best flavor. Store-bought lemon juice can be used, but it will not have the same bright flavor as freshly squeezed lemon juice. For a more intense lemon flavor, try using Meyer lemons or a blend of Meyer and regular lemons.
  • Make sure the butter is softened to room temperature before you start. This will make it easier to cream together with the sugar and eggs.
  • Don't overmix the batter. Overmixing can make the waffles tough.
  • Cook the waffles over medium heat. This will help to prevent them from burning.
  • Serve the waffles immediately with your favorite toppings. Lemon curd, whipped cream, fresh berries, or maple syrup are all great choices.

Conclusion:

Lemon meringue waffles are a delicious and easy-to-make breakfast or brunch recipe. They are perfect for a special occasion or a lazy weekend morning. With their bright lemon flavor and creamy meringue topping, these waffles are sure to be a hit with everyone at the table.
