Tips:

  • To make the pineapple chunks easier to cut, use a pineapple corer and slicer. This tool will remove the core and slice the pineapple into uniform chunks.
  • If you don't have a pineapple corer and slicer, you can cut the pineapple into chunks by hand. Just be sure to remove the core and cut the pineapple into 1-inch pieces.
  • For a sweeter pineapple flavor, use ripe pineapple. Ripe pineapple will be yellow in color and have a sweet smell.
  • Be sure to drain the pineapple chunks well before adding them to the batter. This will help to prevent the batter from becoming too wet.
  • For a crispy coating, be sure to coat the pineapple chunks in the breadcrumb mixture evenly. You can also press the breadcrumb mixture into the pineapple chunks to help it adhere.
  • Bake the pineapple chunks at a high temperature to get a crispy coating. This will also help to prevent the pineapple from becoming too soft.
  • Serve the pineapple chunks warm or at room temperature.

Conclusion:

Lemon pineapple daisy bites are a delicious and easy-to-make treat that are perfect for any occasion. They are also a great way to use up leftover pineapple. With a few simple ingredients and a little bit of time, you can make these delicious bites that are sure to be a hit with everyone who tries them.
