Porcupine Meatballs image

Another really good recipe that I have been making for years. My son really loved them as a kid and still does. He makes them now for my grandchildren. Again this super easy recipe comes from the "Better Homes and Gardens" cookbook c1969 I have added one extra ingredient to this recipe "garlic cloves" Please give it a try....

Number Of Ingredients 10

1 beaten egg
1 103/4 oz.can of condensed tomato soup
1/4 cup uncooked long grain rice
2 tbsp finely chopped onion
2 garlic cloves finely chopped (optional)
1 tbsp snipped parsley
1/2 tsp salt
dash of pepper
1 lb lean ground beef (i use 1 l/2 lbs)
1 tsp worchestershire sauce

Steps:

  • 1. Combine egg, 1/4 cup of the tomato soup, and next 5 ingredients add chopped garlic cloves if using
  • 2. Add beef; Mix well
  • 3. Shape into 20 meatballs
  • 4. Place in skillet
  • 5. Mix remaining soup, 1/2 cup of water and Worchestershire sauce
  • 6. Pour over meatballs
  • 7. Bring to a boil; reduce heat
  • 8. Simmer covered, for 40 minutes, stirring often
  • 9. Makes 4 or 5 servings Enjoy!
