LEMON SHAKER PIE RECIPE BY TASTY

Lemon Shaker Pie Recipe by Tasty image

Easy peasy, lemon squeezy! This pie is full of lemon flavor--whole Meyer lemons are sliced and macerated in sugar to soften, then enrobed in a rich filling and baked between two thin, buttery crusts for a pie that is tart, sweet, and sure to put a smile on your face.

Provided by Betsy Carter

Time 6h10m

Yield 6 servings

Number Of Ingredients 11

2 medium meyer lemons
2 cups sugar, divided, plus 1 tablespoon
4 large eggs, beaten
½ stick unsalted butter, melted
3 tablespoons all purpose flour, plus more for dusting
½ teaspoon kosher salt
1 pie crust, formed into a disc and chilled
1 large egg yolk
¼ teaspoon water
lemon twist, for serving
powdered sugar, for serving

Steps:

  • Zest and thinly slice the lemons into rounds, removing any seeds.
  • Add the lemon zest and slices and 2 cups (400 g) sugar to a large bowl. Stir to coat the lemon slices well. Cover the bowl with plastic wrap and macerate in the refrigerator for 4 hours, or up to overnight.
  • Preheat the oven to 425°F (220°C).
  • Add the beaten eggs, melted butter, flour, and salt to the lemon mixture and stir until fully incorporated.
  • On a lightly floured surface, divide the disc of pie dough in half. Working 1 portion at a time, form into a smaller disc and roll out into a circle about ⅛ inch (3mm) thick. Drape 1 dough round in a 9-inch (23 cm) pie dish. Fill the pie dough with the lemon mixture, then top with the other dough round. Trim any excess dough around the edges, press the edges together and crimp to seal.
  • In a small bowl, whisk together the egg yolk and water until fully combined.
  • Brush the top of the pie with the egg wash and sprinkle with the remaining tablespoon of sugar. Cut 4 small decorative slits in the center of the pie to vent.
  • Place the pie dish on a rimmed baking sheet and transfer to the oven. Bake for 15-20 minutes, until the crust begins to brown.
  • Reduce the oven temperature to 350°F (180°C) and bake the pie for 22-24 minutes more, or until the crust is shiny and deep golden brown.
  • Let the pie cool for 45-60 minutes before slicing and serving.
  • Top each slice with a lemon twist and dust with powdered sugar.
  • Enjoy!

LEMON RUB PIE

Categories     Side     Bake     Lemon     Pastry

Yield makes one 9-inch pie/serves 8 to 10

Number Of Ingredients 20

1 1/4 cups sugar
8 tablespoons (1 stick) unsalted butter, softened
3 large eggs, separated
Zest and juice of 2 lemons
1 tablespoon water
1 tablespoon cornmeal
1/2 teaspoon kosher salt
1 unbaked 9-inch Cornmeal Crust (recipe follows)
Cornmeal Crust
1 1/4 cups all-purpose flour
1/4 cup fine yellow cornmeal
1/4 cup sugar
1 tablespoon freshly grated lemon zest
Pinch of freshly grated nutmeg
Pinch of kosher salt
1 large egg yolk, chilled
2 tablespoons heavy cream, chilled
1 teaspoon pure vanilla extract
6 tablespoons (3/4 stick) cold unsalted butter, cut into small pieces
(makes one 9- or 10-inch pie or tart crust)

Steps:

  • Preheat the oven to 400°F. Have all the ingredients at room temperature before you begin.
  • Cream the sugar and butter in a large bowl with an electric mixer until light and fluffy, about 3 minutes (see Know-how, page 315). Add the egg yolks one at a time, beating well and scraping down the sides of the bowl after each addition. Add the lemon zest and juice, water, cornmeal, and salt and stir to mix.
  • Place the egg whites in a separate large bowl and beat with an electric mixer on medium speed until light and frothy. Increase the speed to high and beat to soft peaks, about 2 minutes more. Gently fold the whites into the yolk mixture.
  • Pour the filling into the unbaked pie shell, place the pie on a rimmed baking sheet, and bake for 10 minutes.
  • Reduce the temperature to 300°F and bake for another 30 to 35 minutes, until the filling sets around the edges but still jiggles in the center when lightly shaken.
  • Remove pie from the oven and let cool for at least 1 hour before serving; the pie will firm up completely, or "set," as it cools. Serve at room temperature.
  • Cornmeal Crust
  • Stir together the flour, cornmeal, sugar, lemon zest, nutmeg, and salt in a large bowl. In a separate bowl, whisk together the egg yolk, cream, and vanilla.
  • Cut the butter into the flour mixture using a pastry blender or two knives in a crosscutting motion until the mixture resembles coarse meal. Work quickly so the butter remains cool and doesn't melt into the flour. Add the egg mixture to the flour mixture and stir with a fork just until the dough clumps together and is moist enough to pat together. Do not mix any more than necessary.
  • Turn the dough onto a lightly floured work surface and, with lightly floured hands, form into a flat disk. Wrap in plastic and refrigerate for at least 1 hour, or for up to 3 days, until firm.
  • Check the pie recipe for special rolling instructions. To prepare a basic pie shell, remove the dough from the refrigerator and let sit for about 10 minutes. Place on a lightly floured work surface. Dust a rolling pin with flour and roll the dough between 1/8 and 1/4 inch thick. Fold the dough in half or gently roll it onto the rolling pin and lift it over the pie pan. Press the dough lightly into the bottom and up the sides of the pan. Trim the excess dough, leaving about 1 1/2 inches of dough draped over the pan. Roll the extra dough under itself to form a rim around the edge of the pan. Crimp the rim of dough with your fingers or press with the tines of a fork. Prick the bottom of the crust two or three times with a fork to create small holes.
  • Cover the crust with plastic wrap and refrigerate for at least 1 hour, or up to 3 days, before proceeding with a recipe or partially or fully prebaking the crust (see Know-how, page 345).
  • Freestyle Lemon Blackberry Tart
  • Prepare 1 recipe Cornmeal Crust (preceding recipe), prebake (see Know-how, page 345), and let cool. Cut the crust into slices or wedges and, just before serving, top each with a dollop of lemon curd, a sprinkling of blackberries and blueberries, and a spoonful of soft lightly sweetened whipped cream or Buttermilk Crème Fraîche (page 320).

LEMON-HERB RUB

Lemon-Herb Rub image

This zesty rub is ideal for leaner foods such as turkey or chicken breasts and flaky white fish (such as halibut, cod, or snapper).

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Yield Makes 12 teaspoons

Number Of Ingredients 7

1 tablespoon dried tarragon
1 tablespoon grated lemon zest
4 dried bay leaves, crumbled
3 cloves garlic, minced
1 1/2 teaspoons coarse salt
3/4 teaspoon ground pepper
3 teaspoons olive oil

Steps:

  • In a small bowl, mix all ingredients.

Tips:

  • For a perfectly flaky crust, use cold butter and shortening. Cut them into small pieces and work them into the flour until they resemble coarse crumbs. Avoid overworking the dough, as this will make it tough.
  • To prevent the pie crust from shrinking, chill it for at least 30 minutes before baking. You can also blind-bake the crust before filling it, which will help to set it and prevent sogginess.
  • Use fresh, juicy lemons for the filling. Meyer lemons are a great choice, as they have a sweeter, less tart flavor than regular lemons. You can also use a combination of lemons and limes for a more complex flavor.
  • Don't overcook the filling. The lemon curd should be thick and bubbly, but not curdled. Remove the pie from the oven as soon as it reaches the desired consistency.
  • Serve the pie warm or at room temperature. Top with whipped cream, ice cream, or fresh berries for a delicious dessert.

Conclusion:

With its bright, tangy filling and flaky, buttery crust, lemon rub pie is a classic dessert that is perfect for any occasion. Whether you're serving it at a summer potluck or a holiday gathering, this pie is sure to be a hit. So next time you're looking for a delicious and easy-to-make dessert, give lemon rub pie a try. You won't be disappointed!
