Lemon-Ginger Chicken Salad image

Excellent recipe! Good by itself, on rolls, or between slices of bread. I served this at both of my daughters' baptism parties when they were wee little ones. Very popular--one of my all-time favorite dishes. From one of my all-time favorite cookbooks, "Creme de Colorado", a junior league cookbook.

Tips:

  • Use fresh ingredients for the best flavor. Fresh lemon and ginger will give your salad a bright, vibrant taste.
  • If you don't have fresh ginger, you can use ground ginger. Just be sure to use less, as ground ginger is more concentrated.
  • Be sure to shred the chicken into small pieces. This will help it absorb the dressing and make it easier to eat.
  • If you're using a store-bought dressing, be sure to taste it before you add it to the salad. You may want to thin it out with a little water or lemon juice.
  • Serve the salad immediately, or it will get watery. You can also store it in the refrigerator for a few hours, but it's best when eaten fresh.

Conclusion:

Lemon-ginger chicken salad is a healthy, refreshing, and delicious salad that's perfect for a light lunch or dinner. It's also a great way to use up leftover chicken. With its bright, citrusy flavor and tender chicken, this salad is sure to please everyone at your table.
