LEMONY GARLIC SHRIMP WITH PASTA

Lemony Garlic Shrimp with Pasta image

This is a very elegant dish good for a nice simple meal. Tasty and pretty enough for company, but my husband and I enjoy it as a nice weekend meal. The brining of the shrimp takes the longest, but is very easy and improves the taste and texture of the shrimp.

SHRIMP WITH SUN-DRIED TOMATOES

Shrimp With Sun-Dried Tomatoes image

Sun-dried tomatoes might scream 1980s nouveau cuisine to you, and that's a fair assessment considering their somewhat profligate use throughout the decade. Yet this dish may have you reconsidering their place in your pantry. Used sparingly, sun-dried tomatoes can impart a bold tomato-y taste that Mark Bittman argues is in some ways "better than 'real' tomato flavor." In this 20-minute sauté, the intense tang of capers and tomatoes plays beautifully off the mild sweetness of shrimp. Serve it over pasta or rice, or alone with a big hunk of good bread.

Provided by Mark Bittman

Tips:

  • Use fresh, succulent shrimp: Opt for wild-caught shrimp whenever possible, as they often have a sweeter, more delicate flavor compared to farm-raised shrimp. Before cooking, ensure the shrimp are deveined and cleaned properly to remove any grit or sand.
  • Marinate the shrimp: Marinating the shrimp in a zesty mixture of lemon juice, olive oil, garlic, and herbs not only infuses them with flavor but also helps tenderize them. Allow the shrimp to marinate for at least 15 minutes, or up to overnight, for maximum flavor absorption.
  • Cook the shrimp properly: Overcooking shrimp can make them tough and rubbery. Cook them quickly over high heat, either by sautéing, grilling, or roasting, until they are just opaque and pink. Avoid overcrowding the pan or cooking them for too long, as this can easily result in overcooked shrimp.
  • Use ripe, flavorful tomatoes: Select ripe, juicy tomatoes for the best flavor. Heirloom tomatoes, with their vibrant colors and unique flavors, are a great option if available. Alternatively, use a combination of cherry tomatoes, grape tomatoes, or Roma tomatoes for a variety of textures and flavors.
  • Enhance the sauce with herbs and spices: Don't be afraid to experiment with different herbs and spices to create a flavorful sauce. Some popular options include basil, parsley, oregano, thyme, red pepper flakes, paprika, or a pinch of cayenne pepper for a subtle kick.

Conclusion:

This delectable Lemony Shrimp with Tomatoes dish is a delightful symphony of flavors that combines succulent shrimp, juicy tomatoes, and a zesty lemon-herb sauce. It's a versatile dish that can be enjoyed as an appetizer, main course, or even a light lunch.
