CREAMY TORTELLINI SALAD WITH CHICKEN, BACON, AND RANCH DRESSING

Creamy Tortellini Salad with Chicken, Bacon, and Ranch Dressing image

When I moved to Oklahoma, I discovered a pizza called "chicken bacon ranch" and this pasta salad is a nod to the flavors in the pizza. If desired, marinate chicken in ranch dressing, and grill chicken to bump up the flavor.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make your salad sing. Look for ripe tomatoes, crisp bacon, and tender tortellini.
  • Don't overcook the tortellini: Tortellini should be cooked aldente, or slightly firm to the bite. This will prevent it from becoming mushy in the salad.
  • Crisp up the bacon: Crispy bacon adds a delicious smoky flavor to the salad. Cook the bacon until it's golden brown and crispy.
  • Use a light dressing: A light dressing will allow the flavors of the other ingredients to shine through. A simple vinaigrette or lemon-tahini dressing is a great option.
  • Add some fresh herbs: Fresh herbs, such as basil, parsley, or cilantro, will brighten up the salad and add a pop of color.

Conclusion:

This lemony tortellini bacon salad is a delicious and refreshing dish that's perfect for a light lunch or dinner. It's packed with flavor and texture, and it's sure to please everyone at the table. So next time you're looking for a quick and easy meal, give this salad a try. You won't be disappointed!
