Time 9h15m

Yield 6-8 serving(s)

Number Of Ingredients 10

2 cups lentils, washed and drained
6 cups water
1 onion, chopped
3 carrots, sliced
3 stalks celery, with leaves, diced
2 garlic cloves, mashed
2 teaspoons salt
1/4 teaspoon black pepper
1 (16 ounce) can tomatoes, drained and chopped
6 frankfurters, sliced

Steps:

  • Combine all ingredients, except frankfurters, in crock pot.
  • Mix well.
  • Cover pot, turn on Low and cook for 8 hours.
  • Add frankfurter slices and cook an additional hour.

Tips:

  • To enhance the flavor of the soup, use high-quality chicken or vegetable stock. If you don't have any on hand, use water and add a bouillon cube or two.
  • Don't be afraid to experiment with different types of lentils. Green lentils hold their shape well, while red lentils break down and thicken the soup. You can also use a mix of lentils for a variety of textures.
  • If you don't have any frankfurters, you can use hot dogs, kielbasa, or even diced ham.
  • Add vegetables that you enjoy. Carrots, celery, onions, and potatoes are all classic additions, but you can also try adding sweet potatoes, parsnips, or turnips.
  • Season the soup to taste with salt, pepper, and other herbs and spices. Garlic powder, onion powder, and paprika are all good options.
  • Don't overcook the lentils. They should be tender but still have a slight bite to them.
  • Serve the soup with a side of bread, crackers, or a green salad.

Conclusion:

Lentil Frankfurter Soup is a hearty, flavorful, and easy-to-make soup that is perfect for a cold winter day. It's also a great way to use up leftover lentils and frankfurters. So next time you're looking for a quick and easy meal, give this soup a try!
