It's a pork sausage version of my favorite meatloaf recipe and it's awesome with pancakes, omelets, French toast and on a Brunch Burger.

1 ½ pounds lean pork sausage
⅔ cup bread crumbs
½ chopped white onion
1 egg
1 shallot, minced
1 teaspoon salt
½ teaspoon ground black pepper
½ cup buttermilk
2 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Place pork sausage, bread crumbs, onion, egg, and shallot in a large bowl. Season with salt and pepper. Pour in buttermilk; mix thoroughly. Pat mixture gently into the prepared loaf pan; top with ketchup.
  • Bake in the preheated oven until edges are bubbling, about 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Cool for 5 minutes before slicing.

3/4 lb ground lean pork
3 extra large eggs, lightly beaten
3/4 cup onion, diced
3/4 cup celery, diced
1/2 cup green bell pepper, diced
2/3 cup tomato juice
1/3 cup evaporated milk
1/4 cup saltine crumbs, crushed
1 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Heat oven to 350ºF.
  • Lightly grease a large, shallow meatloaf pan, or a large shallow baking pan.
  • In a large bowl, combine all of the ingredients, mixing well.
  • Firmly shape the meat into a 7 x 3 1/2 x 3 1/2- inch loaf and place in the pan.
  • Cover loosely with foil.

2 slices bread
your favorite leftover meatloaf
1 egg
2 slices American cheese (or your favorite other toppings (tomato, lettuce, bacon, pickles, whatever you like)

Steps:

  • Butter one side of each slice of bread.
  • Place one slice of cheese on one of the unbuttered sides of the bread.
  • Slice meatloaf into about 1/2 inch thick slices.
  • Heat nonstick frypan and add meatloaf slices.
  • Fry meatloaf until warmed through and slightly browned.
  • Remove from pan and place on top of cheese.
  • In same pan, fry the egg to your liking.
  • (I like to break the yolk for sandwiches) Remove the egg from pan and place on top of meatloaf slices.
  • Add the second slice of cheese on top of the egg.
  • Put the remaining slice of bread, buttered side up, on top of cheese.
  • Place sandwich in frying pan, and cook over medium heat until bottom piece of bread is nicely toasted.
  • Carefully flip sandwich over, and cook, again until the bread is nicely toasted.
  • Remove from pan, add any other toppings if you like, cut in half and enjoy!

1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon butter
1 round loaf (1 pound) French bread
6 ounces sliced deli ham, divided
3/4 cup shredded Monterey Jack cheese, divided
