LESLIE'S HAM LENTIL SOUP

Leslie's Ham Lentil Soup image

I originally called this my 'experimental lentil' soup, patching together various other lentil soup recipes. I've been making it every fall for a decade now. What's listed here is a single recipe, though I can't remember the last time I've made such a small batch. It's great for freezing in individual servings for lunches.

Provided by Bev I Am

Categories     Ham

Time 1h50m

Yield 3 1/2 quarts

Number Of Ingredients 10

1 leftover smoked ham bone or 2 smoked ham hocks
1 lb lentils, picked over and rinsed (about 2 1/2 cups)
1/2 lb mushroom, chopped (about 3 1/2 cups)
3 onions, chopped coarse
1 cup chopped carrot
1 cup chopped celery
1 cinnamon stick
1 bay leaf
3 1/2 cups beef broth
8 cups water

Steps:

  • In a 6- to 8-quart kettle combine all ingredients and simmer soup, covered partially, stirring occasionally, 1 1/2 hours.
  • Discard bay leaf and cinnamon stick and remove meat from bone or hocks.
  • Chop meat and stir into soup.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the soup will taste. Use fresh vegetables, flavorful herbs, and a good quality ham.
  • Don't overcook the lentils: Lentils should be cooked until they are tender but still hold their shape. Overcooked lentils will become mushy and lose their flavor.
  • Add vegetables that are in season: This will help you get the best flavor and nutrition from your vegetables.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste. You may also want to add a splash of vinegar or lemon juice to brighten the flavor.
  • Serve the soup with a side of bread or crackers: This will help to soak up the delicious broth.

Conclusion:

Ham and lentil soup is a hearty, flavorful, and nutritious soup that is perfect for a cold winter day. It is also a relatively easy soup to make, and it can be tailored to your own taste preferences. So next time you are looking for a delicious and satisfying soup, give this ham and lentil soup a try.
